Lacking in produce

For my last meal with kale in a decade (dramaticcccccc) I used the rest of this tahini miso dressing with kale, spiralized butternut squash and pecorino romano. And that’s the last time I had vegetables.  Ever.  The end.

Ok not really, but I was trying to polish off all the food in the house without buying anything new, so as a result the produce drawer has been deserted for quite a while.  We are starting off summer with a bang and hitting the road.  But because I am SO anti food waste, I made sure to eat every last thing in the house before we left.  For better or worse, there would be no new food purchasing allowed the week before we go!

Accordingly, I’m pretty sure I have had 5 different kind of cracker and or chips in 48 hours.  Not everything is shown, obvs, but suffice it to say, I think I won the award for having the emptiest fridge before going on vacation.

I haven’t made up my mind about these forager chips.  They are not quite salty enough, but besides that, they are a confusing taste.  Like, part sesame chip, part juice pulp, part healthy, part weird.  I don’t know.

What I DO know is that those rhythm superfoods kale chips (original) are the best ones on the market.

What’s your go to cracker right now?  Mary’s Gone crackers and Simple Mills are high on my list, but then I discovered the GF Norwegian crispbread from TJs and it is pretty much the yin to my yang.  It goes with everything – sweet or savory.

    Exciting! Have fun on vacation :))
    There’s something very satisfying about leaving town with an empty fridge. Although i do always have fresh veggie panic so i just take whatever last bits are left as a salad or raw veg snacks while traveling to avoid paying $$$ for the same thing.
    Dr Krackers might be favorite fancy crackers but i am SO into those same crispbreads from trader joe’s! Literally buying multiple packages per shopping trip- i am kinda paranoid they will be discontinued without any warning. Right now i like them with nut butter and whatever fruit or as a scooper for beany salads

    I knoW!!! It’s always my worry with costco or tjs. I’ll fall in love with something and then theyll stop carrying it. Fingers crossed!! You and I may be buying enough to keep it?
