May day

P seems to be waking earlier and earlier these days so my breakfasts are kinda growing in order to hold me over for the long(er) interim between the morning shuffle and lunchtime.

Kyle’s a gem of a husband and so unless he has a really early meeting or call, he plays with P for a little bit and let’s me get a workout in.

If he can’t, I take the BOB out for a stroller jog that ends with fun at the park.  We actually have a few different parks near us, so depending on which route I take I can stop at various places to play with him.

There are also goats, cows, and horses that we sometimes pass – all of which are mesmerizing to my little man.  Of course, so are sticks, so ya know, whatever works.

Anyway, I often nibble on P’s food while I feed him and sip my coffee.  It’s probably a bad habit, but I hate seeing things go to waste so if he decides he’s done with something (that can’t be tupperwared up for a later meal), I usually just finish it off myself.

Polenta is definitely a new favorite discovery for me.  Hooray for TJ’s – it’s organic, inexpensive, and tasty.  I just fry it in the pan before I do my eggs.  Topped with avocado and salt and boom.  Breakfast is served.

P’s latest thing is “cleaning”.  It’s AMAZING how much he picks up on (my) habits, because he got a hold of a napkin last week and next thing I know he’s hunched over the ground wiping the floor EXACTLY like I do after his meals are done.  He’s been doing it every day since.  And he loves it.  I can tell he is so proud to be doing it just like mama.  So I’m going with it!  After he is done eating I hand him a rag and I tell him he’s my helper as we clean together.

This was a totally inadequate lunch and I ended up eating another serving an hour later.  Oops!  I don’t know what I was thinking.

For the record, it’s peanut butter, avocado, and hemp seeds on Lundberg Farm’s brown rice cakes.

I had an apple as a snack later.  I don’t eat apples very often anymore because they are FODMAPs, but they have been looking SO good lately that I just can’t help myself.  Thankfully I didn’t feel anything the next day, so I guess the rest of the day’s FODMAPs were low enough to keep the load on my gut at a tolerable amount.

I made pasta for dinner, based loosely on this recipe.

In reality, the only thing similar between Becky’s dish and mine was the pasta, kale and squash.  I used goat cheese instead of parm and ricotta.  I nixed the bechamel sauce.  And I used GF pasta from TJ’s.

P had one piece of squash and spit it out.  He did eat some plain pasta with olive oil though.

We ate outside because it’s been sooo nice lately.  It was a simple but filling dish that left us with a bit of extras despite the fact that we both had seconds.

I had a few pieces of chocolate for dessert along with some unpictured candied ginger and Roscato.  I never take pics of my desserts because they are generally the same, day in and day out (TJ’s pound plus chocolate), but I thought the swirl pattern of these Dove pieces warranted a photo.  They’re from my MOPS meetup.

    I’ve been a reader for some time now but have never commented! (Which sounds so creepy now that I type it).
    Anyhow I started reading for the fitness/food aspect because I am a runner, gluten intolerant, and lover of Jillian. And then we were both pregnant around the same time (your son and my daughter are six-ish months apart, I think?) I’ve been a stay-at-home-mama now for going on six years (my son is five).
    And now I have to say I appreciate reading due to the allergy aspects. Sometimes it feels like our household deals with a million food and health challenges (asthma, gluten, peanuts, blah) and now we have recently encountered a rather scary reaction that my daughter had to eggs and coconut oil.
    Just wanted to say Thank You for putting it out there. I know food allergies aren’t the biggest hardships in the world to bear, but worrying about your littles can be stressful and sometimes it is nice to know you aren’t alone, you know?
    Now, off to pressure for some allergy testing (for some reason here in Canada, I am being told it isn’t worth testing my daughter until she is older, even though her reaction could lead to anaphylaxis).

    We must have had the same food thoughts because just this past weekend I made polenta slices topped with jam, avocado, and a runny egg… it was SO good!

    P.S. I now feel as though I must try the PB and avocado combo!

    Oooh, polenta for breakfast is such a great idea! It’s one of those foods that I buy and never know what to do with…I forget how versatile it can be.

    That TJs polenta is awesome- i love baking it in chunky cubes for salad “croutons” too. The pb avo hemp seed combo sounds interesting, but that wouldn’t have been enough for my lunch either!
    That’s great you could have an apple with minimal side effects- i really don’t think i could deal without my daily fix.
