Niece #3

I know I said I was heading out of town this weekend (I am), but I had to pop in to tell you two very awesome things.

I have a new niece!  Scarlett Alice was born in the wee early hours Friday morning.  Isn’t she precious.  :)  I love her to pieces already.

The second is considerably less thrilling to everyone else, but I was pleased nonetheless.

This is my happy face after getting a call saying the unit was overstaffed for the night and I could have a holiday.  Wee!!  I was just about to head out the door too.  Saved by the bell phone call.  I stripped outta those scrubs faster than the any of the horny cast members of Grey’s Anatomy.  Now I’ll be on more normal hours and better able to socialize this weekend.

Instead of my packed food, I made a real meal.

Avocado meet Sabra veggie dip.

I thought I didn’t like dill, but it turns out I was wrong.  Kyle’s pickle-phobia has apparently become my own (which is weird because I used to love pickles, too).  But since he won’t go near anything pickle/cucumber/zucchini/dill related, I’ve been trained to operate the same way.  With the exception of zucchini.  Clearly he’s brain warped me.  Anyway.  I got these from Sabra and told Kailey to have her way with them since Kyle and I both declared we wouldn’t. 

Again, I find myself eating my words.  The dill isn’t very noticeable and it is so cool and refreshing – the perfect summer dip.  Now that it’s August I have to really embrace these last few weeks of heat and get my fill of meals centered around cool produce.

I decided to stuff romaine lettuce hearts with a yogurt & avocado veggie mash.

I used to do this all the time in NYC, despite the inferior avocados.  And since I was randomly re-reading some of my old posts the other day I came upon this one, and it’s been in the back of my mind ever since.  Never mind the hideous photos, my old posts are still fun to re-read because they are like journal entries.

The stuffing had 1 whole avocado, a few spoonfuls of Sabra cucumber & dill veggie dip, some cherry tomatoes (from our plant!), corn, & carrots.

Once the avo mash was gone, I finished off the last few lettuce shoots with some hummus.

And then snacked on some Lesser Evil veggie krinkle sticks.  That bag lasted me two servings.  Delicious.

Since it was still early, Kyle and I followed up dinner with a walk.  We ended up doing a few necessary errands (dish soap, B&N, vegan ice cream), as well as some unnecessary shopping (Kyle hates going into Victoria Secret but he endured it).

Back home I had home-made lemonade (fresh squeezed lemon, water, agave, ginger) and leftover carrot cake.

    did you bake the carrot cake? if so, you are truly in a league of your own and i have no idea how it is that we are friends.

    who had the baby? i love the name scarlett. i’m a big fan of old fashioned names. since kourtney kardashian stole my future daughter that i may have when kyle (MY kyle) knocks me up, i’ve been on the hunt for a new name. i googled “popular baby names from the gilded age”. they were all religious names. yuck. for a week straight i kept saying, “ooo, kyle, what about the name ___.” i finally figured out a name. which means that i will definitely have a boy someday.

    WOO! Love getting those day off calls! Except for me it’s usually on my day off, I get called in to work :(. I see it as an opportunity to make extra money so I can afford my expensive food habbits! P.S. You posted about Kale Krunch Chips the other day – well, I’m now addicted. SO AMAZING!!

    Congrats! My new niece was born 2 months ago and I loved her to pieces from the start too 🙂

    And dill is delicious! I just got a huge bunch from the farmers market this morning…so refreshing and good. It pairs really well with lemon and tomatoes and, well…everything! So good–don’t let Kyle sway you!

    BTW, I be your homemade lemonade would have been delish with sparkling soda stream water too!

    im gonna have to try and re-learn to love dill is guess. kyles would have a stroke if he saw a jar of pickles in the fridge though.

    Dill pickles are SO good! What is wrong with Kyle?! Do you ever put fresh herbs in your salad? Fresh dill mixed in with your greens is really good. Same with cilantro and basil, but I just had a salad with romaine, dill, tons of veggies and topped with nutritional yeast…
