Nutty pasta

Pasta!!

I made this over a week ago, but the recipe is still worth sharing. Although “recipe” may not be the right word, since it’s a pretty loose formula.

But I made the effort to photograph it, so dang it, I’m gonna freakin’ share it.

Roasted nuts – brazil, pecans, cashews, almonds
Basil
Parsley
Garlic infused olive oil
Plain almond milk
Nutritional yeast

Sorry for the lack of measurements, but I was kinda playing mad chemist, throwing things in until I got the right amount.

Unlike my previous pesto, this was a really thick one. It had lots of nuts and as a result, it was very rich (I loved it).

I used half De Boles oat bran spaghetti and half Mara’s Pasta whole wheat fettuccini.

I can’t remember the last time we ran out of pasta in this house, but this was that day. Fortunately, I had at least some form of noodle to work with.

I served us both up with a pretty monster sized portion. There were hardly leftovers.

Then I mixed it all up and dug in.

Delish!

Brazil nuts are rarely included in my diet (they normally skeeve me out), but combined with almonds and pecans and cashews I could really get on board. It was certainly a hearty dish.

    Hi! We love your site! Really hoping you can help with something. We have been trying to do the slow cooker steel cut oats. Problem is the one I purchased, Crock-Pot 2qt, is way too hot on low and the oats burn and stick to the sides. I’ve even spayed with cooking oil (not an ingredient I like very much), as others have suggested, to no avail. What slow cooker/cookers do you use?

    i wish i had a rational answer that made sense…alas, its my own weird issue…but im overcoming it!!

    hmmm…im not sure why it would do that elya? have you contacted the company that makes the crockpot? i have a big one too – i think its a 2 qt – so i dont think size has anything to do with it.

    Mine is really small about 8cups liquid / 2 qt. What brand size is yours? Also, just bought the tofu x-press from your recommendation. New to cooking with tofu. Usually just get it prepared at WF. Also, my stepdaughter loves your site too!

    hmmm… i wonder whose place setting had a piece of bread next to it. probably kyle’s. i know how much he likes to get carb and earth balance wasted. you should really get after him about that.

    I love making my pesto with nuts! It’s so filling and delicious. I’ve never incorporated brazil nuts into the mix though- I’ll have to try that. I’m like you…I can’t really eat them plain but I know the nutritional stats are awesome.

    mmmmm i love pesto!! i made almond and kale pesto the other day and thought of you 🙂 i’m sure you know this, but pesto freezes well! although it’s hard to not eat it all at once…with bread…with a spoon….! xxxxx
