Quinoa carotene bowl

Who loves orange food?  I do!  I probably have amazing Vitamin A levels 🙂

Sweet potatoes have B-carotene up the yin yang (a precursor to Vitamin A).

I had baked these rounds a few day ago and they were just waiting to be incorporated into a recipe.

More orange foods!  Bell peppers and carrots and hummus

Plus red quinoa and couscous.

I ate some of the baked sweet potato rounds as chips.  Perfect hummus vehicles 🙂

The only thing you need to do for this recipe is add everything to a bowl.  Then top with hummus and nutritional yeast.

And a drizzle of water or almond milk to thin out the sauce.

Did I mention the prep time for this was 6 minutes?  Talk about an easy peasy vegan meal.

Whoa…impressive vitamins/minerals huh.  In addition to the outstanding 311% Vitamin A, this recipe is packed with thiamin, riboflavin, and B vitamins too.  Nice!

    That looks great. I have developed a new love for sweet potatoes but don’t have very many ways to use them yet. This I must try. The 18+% iron is especially helpful for me because I have a genetic form of anemia I have to keep an eye on.

    Looks delish! Love this combination and it’s so easy to make. Look at that whopping 26,1 grams of protein! I think nothing beats a dressing made out of hummus, nutritional yeast, mustard, garlic powder and water. Hummus is the bomb!

    This looks absolutely delicious, and so packed full of goodness! Love orange foods…once I went to a dermatologist (not for my beta carotene tan) and he told me my skin was orangey and did eat lots of carrots. I was like, nope, i eat soooo much squash though! 😛 Ooops…I have a perma tan from my habit, it seems! Not too noticeable to me or my friends/family…it’s become my natural hue, I guess! And no way am i giving up my orangey foods, lol! 😉 xyx

    i swear, i have esp. i just packed a quinoa lunch today and it was almost like this, only with different veggies. 1/3 c. quinoa cooked in 1/4 c. light ragu & 1/2 c. water, mixed with 2 tbsp. garlic lovers hummus and nooch. it tasted like PIZZA. i just steamed some snap peas on the side <3 you would love it! (:

    thats the calories/stats for the amount i ate. approx. 3/4 of it is shown in the photo (didn’t all fit in the bowl), but i went back for the rest after.

    yup. i cook grain in bulk at the beginning of each week so i have them on hand at all times.

    I was wondering how long and at what temp did you roast your sweet potatoes, and did you put anything on them?

    350 degrees, 30 minutes, no oil just cooking spray on the baking sheet.
