Here’s the nice one.  The thought-out, put-together, balanced bowl of veggie goodness.

And here’s the, uh, “special” one.

The what-do-we-have-in-the-fridge, too-lazy-to-chop, mish mash pile.

Both do the job though right? [By “job” I mean, provide my body with quality vitamins and minerals]

Here’s the details on the pretty one.

Veggies: spring greens (silly that the mix is called that since it’s winter everywhere else but Los Angeles) & carrots

Protein: morningstar chik’n nuggets & quinoa

Dressing: BBQ sauce

I made this same medley for lunch, twice in a row, before the veggie chix ran out.  They definitely aren’t the healthiest (the ingredients list is approximately a mile long), but they are fun to jazz up a salad.  And hey, they got me to EAT a salad, so that’s really the biggest thing.

I think it might be a good luck charm for the 49ers too (things really turned around for them once I dug in to this bowl).  If I’m in the hospital during the Super Bowl, someone is going to have to make sure I get this salad. 

The more pathetic concoction (with peas, whole carrots, cherry tomatoes, avocado, & nooch) is what happens when you run out of chik’n nuggets ambition.  It’s also proof that the combination of avo and nutritional yeast can rescue anything.

    It’s also not winter in Florida. We have had a few cold days in a row two or three times this whole season. My poor peach tree doesn’t know whether to drop it’s leaves or hang on to the last few. lol

    Hey! Have you tried the chickenless chicken nuggets at Whole Foods? I think they’re 365 or Whole Foods brand. They are new to our store – but I live in Chattanooga so we’re the last to get things! – but they are awesome!!! They are not soy based. They’re made with vital wheat gluten and the ingredients list isn’t as scary as the morningstar stuff. They’re so delicious even my boyfriend eats them and he’s a die hard meat eater….eats them like I make some for me and then they’re mysteriously all gone!

    I feel like such a vegan failure for never having had morning star products but I have been in such a salad rut that I might just be taking your advice and trying this out, and soon!

    i JUST discovered them this past month. i havent tried them yet, but now that youve given them the thumbs up i for sure will. i love that they’re made w vital wheat gluten. cant wait to give em a shot.

    def not a vegan failure worthy act. i think youre a better vegan for avoiding the faux meats and sticking to wholesome salads! the health is wealth brand chikn nuggets are better in my opinion.
