Tupperware tupperwhere?

I woke up this morning and found that Kyle had left me a note.

Obviously these vegan, gluten free, agave sweetened brownies satisfied my boy’s taste buds!

Poor guy was at the office until the wee hours of the night (long after I went to bed), so when he got home he went to town on the remaining baked goods.

Thanks to his note, I got a good laugh in as I headed off to work.

Packed lunchables.  Yes, TWO apples today.  Honestly, I feel like I should bring in more, but my reputation on the unit is already a bit questionable, so I’m not looking to be the girl who eats a bushel of apples a day.  Well, I guess it could be worse…

Salads galore!  The left was spinach, shrooms, snap peas, green beans, and raisins.  The right was baked carrot fries.  Ooops, did I forget to tell you about my oven/carrot show-down?

This, my friends, is what I’d call shrinkage.  I did NOT realize that 4 horse carrots would shrivel down so drastically! 

For my lunch tupperwared portion, I salted, agave-d and cinnamon-ed them and threw in a few dried cranz for sh!ts and giggles.

I had zero clue what I wanted when I got home, so I went with what was on hand (aka tupperwared basics), which happened to be steamed veggies, quinoa, and hummus.  It wasn’t what I was really craving though.  And, sadly, I couldn’t friggin’ figure out what I DID really want.  Sometimes I think if things aren’t in a tupperware, I just plain ignore them.  I guess all my food prepping has trained my eyes to only see the goods in the clear foggy (I’m a hippie, so they are from the 90’s) containers.

This Smart Balance-ified naan was my second effort.  Still not right though.

I’m not sure when this made it’s way into our freezer, but HOW it was still untapped is a mystery to me.  I’m a bit ashamed proud to say I demolished well over half the container.  Who makes these darned serving sizes? 

Off to bed for more joy in the cardiac step down tomorrow, no doubt.  Thanks for all your supportive comments on my last post.  It was definitely a boost to read everyone’s kind words 🙂

    Were they horse food apples? If so, two is perfectly acceptable. Horse carrots made into fries? Genius. I need to get on that! I am starting to lose my Oompa Loompa glow.

    I’m loving the pools of Smart Balance on that naan – drool worthy.

    well my dear, not only were you the inspiration for the carrot fries, but if ever (WHENever) i feel like i’m doing some cooking thats slightly on the odd end of the spectrum, i simply remind myself of a number of your latest creations and i feel “normal” again… dont take that the wrong way, i love you and your eats so effing much im tempted to move to oregon, and bride my way into your home with hummus…

    Those Jocolat bars look amazing, I’ve been looking for them with no luck so far. How did the carrots turn out? It seems like they’d get a bit chewy.

    Your lunches are always SO delicious looking! I’ve never made carrot fries but I think you might have just inspired me. I can’t even imagine how scrumptious they would be!

    2 apples? That’s nothing. I recently ate 7 apples in one day! Yes, 7.

    That used to be my very favorite ice cream!!! Then I couldn’t find it, and now I can’t have soy. It’s a shame 🙁

    So I’ve decided that your packed meals are perfect. I think my sister (also a nurse) could learn a few things from you–your veggie-ful meals are a vast improvement over her pudding and Goldfish-filled ones.

    I LOVE your packed meals.. you totally eat like me. I always have more than one of an item (ie 2 bananas, 2 lunas etc). I dont like to be hungry! Carrot fries=amazingness! 🙂

    I need to find smart balance although I do love Earth Balance 🙂 Yummy ice cream! I almost bought ice cream today, btu just don’t trust myself. LOL I am an apple freak too it’s all good. They are easy to eat and crunchy.

    Isn’t it crazy how much carrots shrink?? I was so disappointed the first time I made them!

    I also eat several apples per day so you’re not alone.

    In the dehydrator carrots have even more shrinkage factor. Hard to believe but yeah, they do. That’s why I always like a huge slab o carrot for roasting b/c the fry shapes stay bigger. Full of TWSS potential I realize 🙂

    What’s the verdict on the Jocolat? PBJ is my favourite by a loooooong shot.

    Carrot fries…that is the kind of thing I would make to last a week and eat in one sitting. Like the squash I made today. Dang, I have zero self-control around roast veggies!
