Yellow cupcakes

A long time ago I was contacted by Wholesome Chow, a company that sells vegan (and some gluten-free) baking mixes.

They sent me a vanilla cake mix – vegan, organic, fair trade, casein, peanut, wheat & gluten free. 

The ingredients are all recognizable (always a good thing) and the company has eco-friendly practices , plus they use locally sourced ingredients.

Could the steps be any simpler?  [you have to say that with a Chandler accent]

1.  Add non-dairy milk and apple cider vinegar together and let them curdle.

I used almond milk.  Once it got frothy I knew it was ready. 

2. Rather than add regular oil (like the instructions call for) I used coconut oil.  It figures I would figure out a way to stray on a recipe that only has 4 steps.  🙂

3.  Slowly mix in the dry mix.

4. Once it’s smooth, pour into cake pan (or cupcake tins).

5. Bake for 20 minutes at 350.  So quick!!

6. Remove from oven and ENJOY! 

Note: I probably should have included a step saying “wait for them to cool” but we all know that the smell of coconut and fresh baked goods is too amazing for that to happen (I’m trying to be realistic here).

You know that word that everyone hates, but describes really yummy baked goods perfectly?  I know you know the word I’m talking about…

It was that. 

Not the least bit dry.  In other words, pastry perfection.  I calculated the calorie counts based on how I used the mix (coconut oil, almond milk, divided into a dozen cupcakes), and each one came out to 142 kcals.  Not bad at all!

They were so good, I didn’t even feel the need to frost them.  Yeah, I’m also lazy.  I could have melted carob chips and iced them with that, but they truly were exceptional on their own.  Don’t believe me?  Try them for yourself. 

I promise you’ll love Wholesome Chow’s cake mix because I’m normally the kind of person that passes on cakes.  They are my least favorite dessert because the vegan ones are rarely very good.  Milk dunking is almost always necessary.  But this mix is awesome.  You don’t get a lump in the back of my throat (you know how that tends to happen with some cakes).  I probably could have finished the entire dozen in one sitting.  That damn sweet tooth.  😉

    I used to hate icing for some reason, but now I could eat it straight out of a can…I think my sweet tooth is growing as I get older! As for my favorite dessert…it would definitely have to be ice cream!

    Total frosting girl here–every year on my birthday my cake-loving brother in law gives me his frosting (from the birthday cake), and I give him my cake. It works out perfectly 🙂

    Cake must be the “m” word and made from scratch. My favorite dessert-that is a toughy! I am going to go with warm oatmeal cookies with pecans, chocolate, and butterscotch chips. I would kill to find a organic version of butterscotch chips. lol. Frosting is pretty iffy for me. My grandma makes a brown sugar one that I love but I can’t stand the stuff from stores that is pure Crisco and sugar.

    my favorite dessert is probably molten lava cake…but i love cupcakes, too! veganizing cup cakes is much easier than veganizing molten lava cake, though 🙁

    I love baking cakes but I almost never eat them. Yesterday a friend of mine celebrated birthday and I was somehow “forced” to eat a piece of cake and I still feel a bit sick this morning (it was a total sugar overload, which I am not used to). Still the party was nice 🙂

    Me and my dad do that with christmas cake! I have his icing and marzipan (somewhat more reluctantly) and he had my cake. It drives my grandma crazy because she usually makes it!

    I love cake!! I wouldn’t say it’s my favourite though, that’s probably my mum’s apple pie (shame about all the butter but I’m working on it!). I do like frosting but I prefer it spread thinly, pretty much the opposite to my boyfriend!

    ugh, i hate that word too, lol! 😛 lets just say that the cupcakes look like they have the perfect texture and consisitency, and sound amazing! plus, anything that bakes that quickly from start to finish is pretty good in my book! 🙂 xyx

    My favourite dessert is dark chocolate or fruit – there really aren’t that many good non dairy dessert alternatives to ice cream or cakes here in the UK, or I would be all over those…I don’t enjoy sorbet at all – it is just too sugary. I think my all time favourite dessert though would have to be frozen banana put through the campion juicer to make banana ice cream…with a drizzle of syrup and cinnamon…amazing! I had that many a times in Thailand and it’s one of the reasons why I wanna go back, lol! 🙂 xyx
