2 1/2 hours for 2 1/2 inches

Yesterday, after my pancakes had digested, I squished a run into the morning (squished being the operative word).  It was 26 minutes long and I was in such a rush to shower and get ready afterwards that I seriously neglected my post-workout stretching.  Bad runner!

Knowing it would be a mistake to leave without eating first, I whipped this up on my way out the door.  I was so friggin’ rushed that in between pulsing the bullet, I was tearing through my closet, jabbing mascara into my lashes, and chucking whatever I could grab in my purse.  Tasmanian devil.

Fortunately I am a smoothie professional (and can make yumminess happen with only 1/16th of my attention span).  

  • 1/2 cup almond milk
  • 3 oz. (1/4 container) silken lite tofu
  • 4 strawberries, frozen
  • 1 banana, frozen in chunks
  • 3 small ice cubes
  • 3 drops NuNaturals liquid vanilla stevia

I cut it so close with timing, I had to take my smoothie on the road. 

The good news about having hideous ponytail-ed (and soaking wet) hair when I left the apartment was that it wasn’t going to last very long…

Hair cut!  [Long overdue]

The cut took 2 1/2 hours because I got it cut at Vidal Sassoon so I had a student checking in with her instructor after each step of the way.  I didn’t really mind.  It meant I had a perfect cut!  It also meant I was staaaarving when I got home.

I pondered dinner while ruining my appetite with a few bowls of cashews

Dinner at 5 pm?  Why not!  I had wilty rainbow chard barely hanging on for it’s life, so that was the ingredient I was working around.

Even on it’s death bed, the colors are gorgeous.

I figured blanching it would be the best way to go, since it was past it’s prime for enjoying raw.  I love the flavor of chard so the less cooking the better in my opinion.

After it cooked and chilled in an ice bath, I got the rest of the meal’s ingreds ready.

Love/hate relationship with Shirataki.  I think I would compare them to Las Vegas…they really don’t offer much, but every once in a while I get a weird craving for them.  I haven’t had them since I have lived in CA, which is more than I can say about visits to Vegas.

The angel hair noodles are the best form because (if I’m being perfectly honest) they don’t have much flavor on their own, so the thinner ones are able to soak up more sauce.

Speaking of sauce… I made a tamari/tahini/ginger blend to cover this in.  The other ingreds were seitan and carrots

FYI, I tried a new seitan recipe with this latest batch.  I’ll share that with you later.

    Your hair looks awesome and even from 1 pic, I can tell the cut is *perfect*. A student at V.S. is no doubt better than the “pros” at about 95% of other salons. I’ve had my hair cut at the VS Chicago years ago…such a great experience.

    I love swiss chard so much, and one of its greatest traits is that even if it’s all wilty and kinda sad, you can always still make SOMETHING out of it. Yours still looks so beautiful!

    I’ve experimented with lots of different types of noodles (gluten intolerant) and while I don’t mind the Shirataki ones, I love Sea Tangle kelp noodles.

    That hair cut looks perfect on you! it’s the sort of hair cut I always want to get, but doesn’t work well with my round face!

    I have wanted to try the shirataki noodles just to see how I like them, but they charge $12 at the health food store. It just occurred to me that the million asian grocers we have in this city probably carry them for a lot less. Duh.
