Choose your own…

You guys probably know my basic hippie bowl formula by now: grain + veggie/green + protein My classic is a quinoa, carrot & seitan bowl, but I also love brown rice, squash & tofu…couscous, spinach & “sausage”…millet, tempeh & kale…the list goes on and on.  This is a pretty obvious statement, but tweaking a meal by only one or two ingredients can often lead to the feeling that it’s a totally different dish.  And you really don’t have to do much extra work.  Take the meal I made the other night for example. protein =… Read more >

23 week check-in

Pregnancy is weird.  I’m definitely changing more and more as the days go by. I’m 23 weeks today and really starting to look big now.  Super pregnant.  I feel like my bump is a whole other body part.  In the morning, it’s manageable, but as soon as I’m upright and gravity allows things to shift, I feel the weight of it.  Big time.  It’s very much a foreign feeling.  I’m unable to sit comfortably on the couch anymore.  My bump takes up so much space that the bend of my hips needs to be greater… Read more >

A bowl of beige

Normally I like getting color into my meals – green being the most important, with oranges and reds close behind.  This meal had none of that going on.  It was predominantly beige.  Presentation points – none.  I was so short on time in making this meal, that I cooked the rice with everything else.  Including frozen corn, orange cherry tomatoes, and (already cooked) chickpeas.    After the rice cooked, I added garlic infused olive oil, TVP and a dash of soy sauce (tamari).   At least it had all the major food groups covered.  I’m… Read more >

All over So Cal

This weekend Kyle and I visited my G-ma in Newport Beach, went to a friend’s baby shower in Fullerton, attended a wedding in Temecula, and stayed with Kyle’s parents in San Clemente.  If you do the math, that’s over 300 miles of driving (6+ hours!!!). Check out how fun this looks. Just our luck – gas prices reached $5.50 per gallon this weekend!  Isn’t that fabulous?  Of course record breaking fuel prices would coincide with such a jam packed weekend on the road. Anyway.  Sarcasm aside, it was pretty awesome to see so many family… Read more >

Breakfast Polenta Plate

I don’t know what the difference is between polenta and grits.  I think it has something to do with the type of corn used to make the meal, but I’m not totally sure about that.  Feel free to offer your two cents if you’re wise to the culinary details. I’m calling this polenta because it’s on a plate.  Grits = bowl.  Polenta = plate.  Clearly I’m not a chef.  I prepared it the same way I’d prepare grits, with a 2:1 liquid to grain ratio.  I used half water & half plain almond milk… Read more >
