I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time.

Work food. I didn’t take photos of my breakfast oats because they’re monotonous and (quite frankly) snooze-inducing at this point. I rarely care about special holiday meals on day’s I work (usually I just reschedule holiday celebrations* as it suits my hospital schedule), but for some reason I was dead set on an Easter Dinner that didn’t involve reheating leftovers. However, as I already shared, I was at the hospital all weekend. Which meant Kyle ditched Santa Monica to spend the holiday with his parents. Somehow the topic of childhood cartoons came up the other day and I mentioned how much loved Popeye. It was one of my top three for sure. Yogi Bear and Woody the Woodpecker were other favorites. But the idea of Popeye chowing down on spinach and saving the world made me so happy as a wee one. Really. It still makes me happy. So does spinach.
