About Elise
I’m a nurse. An exercise lover. A whole foods connoisseur. A health enthusiast. And I have IBS. No need to cue the sappy violin music yet...
I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time.
Hungry Hungry Hippie is a way for me to share my daily dealings with food, fitness, and everything in between.
The word “leftovers” implies the portion in question was at some point unwanted. When you feast on farm fresh fare, this is most definitely not the case. But (shocking as it may seem) there was food left over from dinner. Swiss chard, grilled avocado, grilled bell peppers, and grape tomatoes (all from the farmer’s market), red quinoa, and vegan sausages. For those who asked (all two of you), both Kyle and I looooved them. I am typically skeptical of faux meat products, but Field Roast Grain Meat Co. has really legit ingredients. We… Read more >

I had SUCH a super Saturday. I hit up the farmer’s market, I went for a run, I bicycled, and I made a nice dinner with my beau. It’s too bad I had to work Sunday…which really put a damper on the evening’s karaoke (in hindsight, I’m definitely thinking this is a good thing). Kyle and I made dinner from our Farmer’s Market loot. The menu: Chilled green bean & grape tomato salad with truffle oil & balsamic vinegar Bell pepper skewers Grilled avocado with salt and lime juice Field… Read more >

Are you in auction mode yet? Tomorrow is the day so please please please hit up The Great Fundraising Act and bid on some goodies to help raise $$ for Susan. My quinoa granola is available (click here to bid). It’s vegan and gluten free (and delicious if I do say so myself). The bidding starts at $10 but if it goes even a dollar higher I will throw in some extra hippie faves. Promise 🙂

I don’t have a particularly fantastic work schedule at the moment, but at least I’m on day shift for the entire month. So I’m certainly not complaining! After a sweaty morning sesh with Jillian, I enjoyed a scone before heading into the office hospital. Here’s the stash I brought along. What a snack scene! That would be, dehydrated apple rings, dark chocolate covered edamame, candied ginger, Nature’s Path Chococonut bar, mini PB cookie Larabar, mixed dried fruit, and a baggie of home-made cereal/nut/dried fruit trail mix. Breakfast number two was oats with a… Read more >

You guys are HILARIOUS! I loved the guesses about my pasta’s hidden ingredients. To back up a bit. A few days ago, I had a typical oatmeal breakfast with strawberries, raisins, and peanut butter. But then I added Love Grown Raisin Almond Crunch Oat Clusters of Love… All I have to say is: damn. This is definitely their best flavor – and that’s saying a lot because I friggin’ adored their other granola flavors (especially cocoa). I couldn’t stop. Next thing I knew, I saw the bottom of the bag. Yikes! Needless… Read more >
