A 2 hour lunch

I don’t want to sound like a whiner, but DAYAM, being a mom is hard work. I always thought I knew this, but when Kyle was out of town I really realized it.  For real.  Trying to be productive during those 5 days was a joke.  I gave up after the first day.  So much for finishing moving in (I had wanted to surprise Kyle by having the house all done when he returned from his trip).  But how realistic is vacuuming and hammering the art up on the wall during P’s limited napping time? … Read more >

Passport weekend

This is gonna be a long one, but I like recapping our little family weekends, so this is selfishly for my own (online?) memory. Friday morning I had my usual breakfast, toast with an egg.  Only I added something special, that I’ll review more thoroughly later on.   Hint: it’s the peanut butter.  After eating I spent the morning prepping for an interview.  I have mixed feelings about my timeline for going back to work and it’s a complicated issue that I’m not going to discuss on the blog.  Once I know what the plan… Read more >

One handed Top Chef challenge

It’s hard to write about food…all I want to do is chat brag about my baby boy. He’s perfect.  So don’t be surprised if this blog veers a little in the family/baby direction.  But for now, I’m here with food stuff.  Even more than before, I need super fast meals.  Preferably healthy ones that can be made one handed.    I’ve basically been relying on the rice cooker and crock pot, per usual.  [You can see this post for my go-to quick & easy week night meals]  Love me a brown rice stir fry.   … Read more >

Best meal of the week

I have already gone on and on (ad nauseum) about how much I adore Caesar salad on the blog, so let’s just skip all that stuff and get to the point. Tofu Caesar Salad [vegan] Ingredients: 2 heads of romaine lettuce, chopped 1 block extra firm tofu, cubed & baked Follow Your Heart’s vegan Caesar dressing (optional) nutritional yeast Directions: For the tofu, drain and press the block until there’s no more liquid (overnight is preferable, but a few hours will work).
