About Elise
I’m a nurse. An exercise lover. A whole foods connoisseur. A health enthusiast. And I have IBS. No need to cue the sappy violin music yet...
I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time.
Hungry Hungry Hippie is a way for me to share my daily dealings with food, fitness, and everything in between.
Some days of work just rock. Plain and simple. I leave the hospital feeling like I’m so lucky to have found a job that I not only enjoy, but that allows me to help people. What’s that saying? ”Choose a job you love, and you will never have to work a day in your life.” [Confucius] Yesterday was a great day. There wasn’t anything extraordinary about it. In terms of my patient load, it was pretty average. And yet, I left the hospital feeling so completely content with the 12 hours I had just finished. … Read more >

The chefs at Napa Valley Grille thought they were making a decadent chocolate cake… But to my husband, chocolate is chocolate is chocolate. Eaten like a brownie-from-a-box. Klassy. My ultra refined taste buds demand much better manners. I prefer my chocolate in the form of a Larabar – especially the Peanut Butter Chocolate Chip. I’m so glad I get to spread the Lara-love! :) After reading through SO many brilliant comments, I get to finally announce the winner of the Larabar giveaway… Congrats to Clare from Fitting It All In! Hi, my name is Elise and I’m lactose intolerant. If you so desire, you can read all about my GI issues here, but dairy has been out of my life for over a decade, with one (infrequent) exception. Greek yogurt. To be honest, it’s not a food I eat very often anymore. I used to have it every so often, but then it just kinda fell off my radar. Anyway, the reason Greek yogurt never officially got the boot from my dairy-free diet was because my stomach never seemed to take issue with it. My… Read more >

To be honest, I have never liked potato salad. It looks really gross. That’s probably due to the mayo, which I also never liked. White creamy condiments give me the heebie jeebies. Potato salad is kinda the quintessential picnic food though, right? I can recall many outdoor get-togethers and summer BBQs that had potato salad as a side dish (usually a fairly untouched dish). It seems so un-American to dislike it. But I guess I feel similarly about many other “classic American” foods, too…burgers and fries? I’ll pass. Why does the US have such crappy… Read more >

The other day I had a unique take on oatmeal for breakfast. It wasn’t really oatmeal. Nor was it breakfast. Nor was it intentional. After night shift, I slept in ‘til noon and then woke up to spend my Friday with Kyle. After lounging the morning away, I couldn’t decide if I wanted to go for a run or eat something. I decided to put a pot of oats on the stove, but by the time they were done, I had changed my mind. So I turned the stove off and left the oats while… Read more >
