Baking brownies and eating them too

So if you go to bed at 2 am, it would only seem natural to sleep in extra long the next day to catch up, right?  Somebody tell that to my body.  My rebellious REM cycle had me up WAY too early on my Monday off.  Darn it.

The one perk of being up before the sun?  I was able to get all my errands done that had been piling up since last week.  After my laundry was started (and my coffee was a-brewin’), I threw together some vanilla protein pancakes (yes, that’s what the above yellow batter crap is).

Pshhh.  This did NOT rock my world.  The pro powder must’ve changed the way they cooked because as they cooked on the pan, they just kept rising and rising and rising!  Stop, I said!!  They didn’t listen.  They were more of a shortbread consistency than a pancake.

I sliced strawberries and drizzled some Xagave on top.  Sadly, the strawberries and agave were the best part about these.  I only ate two of the pancakes.

Of COURSE I turned to apples to fill up my tummy (along with a home-made pumpkin buttah – aka cinn/agave-sprinkled pumpkin puree).  Brekkie done.  Laundry done.  Time to restock the groceries…so off to WF I went.

I picked up a treat 🙂

After my productive (housewife-y) AM, I was determined to have a more successful baking sesh than this morning’s pancakes, so I set to work on making BabyCake’s agave-sweetened brownies for my contest winner.  I followed this recipe to the very last drip-drop (ok, I may have added in vegan chocolate chips).

Thank goodness I doubled the recipe because I HAD to dig in immediately.  These were SO moist, and the perfect sweetness without being too rich.  I could have eaten the entire pan!  They crumbled in my mouth.  Who knew vegan, gluten free treats could taste like this?  I am in love with this cookbook!

Feeling emboldened by my baking success, I started food prepping for dinner and the work week.

Whistle munch and crunch while you work.  I snacked on 2 more apples – sliced and diced – while getting frisky in the kitch. 

  • Quinoa
  • Chickpeas
  • Black beans
  • BN squash
  • steamed brocc
  • steamed cauliflower
  • steamed sweet potatoes

After packing 800 tuperware containers in the fridge, I headed to the gym.  Holler!  I hadn’t exercised in almost a WEEK!!  Who am I!?!  It felt glorious to run.  I just wish I had an iPod that worked…yeah…still working on that.

When I got home I made a seriously fantastic dinner.  Inspired by a recent recipe in Fitness mag, I made a curry chickpea stew.

While I was at the gym, I left the pot simmering (super low) with curry, cinnamon, cumin, coriander, chickpeas, carrots, green beans, zucchini, and cauliflower.

Then I spiralized a yellow squash, and scooped some stew on top of it.

Oh, and did I mention some quinoa found it’s way in?

And then tomatoes.

PER-FECT-ION.  I actually had TWO huge plates full of this.  So much comida.  And yet, I didn’t feel uncomfortable by any means.  I was full, but in a content way.  It is amazing to me how such a voluminous meal could still leave me feeling so light.  Whatevs, I ‘aint mad at it.

This is NOT the same photo from above.  No no, these slices were indeed my 5th and 6th apples plated for dessert.  Talk about a delish day of eats!

    But they just kept rising and rising? OMG that would be heaven for me! I havent made pancakes in years b/c I am GF and most GF pancakes are pitiful made from rice flour and the like so I dont even bother anymore. Those look awesome!

    The brownies…those look GF from the looks of the flours you used. Recipe, please?!!!

    Spiralized yellow squash. Do you have the Gena recommended 29.99 amazon Paderno? That’s the one I have. Have never tried it on squash. I just posted it’s results today on sweet potatoes. Not sturdy enough I dont think to hack a raw potato. Zukes, yes. Taters, no. Squash, could be borderline.

    I have garfava flour sitting here too! I made some muffins with it, but they tasted a little beany…did your brownies taste beany? It looks like you mixed it with brown rice? Maybe that helps?

    the brownies are vegan, GF, and delish! it was a mix of brown rice flour and fava/chickpea flour. i swear they are amazing. you MUST get the BabyCakes cookbook. or maybe you should just visit NYC and we will go there together??

    yes, i have the gena rec’d spiralizer. i havent tried potatoes, but now maybe ill hold off, although the box/instructions seem to think it can handle it, i too, was a bit skeptical. the squash works fine though so give it a shot.

    they didnt taste beany to me, they were a mix of fava/garbanzo and brown rice flour (each equal portions). so good!!

    I’ve never had much success cooking/baking with protein powder…though kinda thinking those pancakes look good! Not as good as the brownies though!!!! Dang, I need that cookbook.     This is what I like to see… tons and tons and TONS of apples a day will most definitely keep the doctor away haha. 🙂 I pulled a somewhat similar move with my apple consumption today and loved every bite!

    Ha, you should just move into my sorority house with me! Somedays the only fruta I eat = APPLES. Gala, red delish and green all day, errreeeday (luckily I now have some wf’s raisins, and tj’s flattened bananas to spice it uppp though!) !!
