Back in the states

My flight(s) home were a disaster, but I’m here now! 🙂  I’ve actually been back for a couple of days, but I’m still trying to readjust to the time change. I was sad to leave vacation mode, but if I’m being perfectly honest, I was very ready to return home. Tropical meets comfort

When I think of island vacation getaways, I think of coconuts.  When I think of winter comfort cooking, my mind goes to butternut squash.  So why not combine the two?  Oh yes I did. The base of the dish was made and then frozen nearly a month ago…back when my friend gave me two cases of butternut squash. Wonder of wonders

Miracle of miracles, my breakfast held me over until my lunch break at 1 pm.  That NEVER happens!  I have this cute bowl to thank.  :)  Attune foods hooked it up at Expo West – not only did I get this on-the-go bowl (like a sippy cup for adults), but I also got to fill it with whatever cereals I wanted.  As a huge cereal addict, this was one of the highlights of the Natural Foods show.  I could hardly contain my excitement combining all the cereals to make one mega-master-mix.  Uncle Sam – check! … Read more >

Putting it all together

How to prep for the work week

Many of you have expressed interest in a post dedicated to how I prep for the week.  I have been reluctant to do this (read: lazy) because, quite frankly, it’s a ton of work…taking pictures throughout the process would only add on extra time…and that’s not even including the posting part.  Today, however, I felt inspired.  Here’s a brief look at my process of getting things organized.  Goals: Chop raw vegetables Roast squash/potato/vegetables Make tofu/seitan Make quinoa Make Kyle something (lasagna or pasta in bulk) Miscellaneous dish (“tuna” salad, crock-pot stew, chewy oat bars, etc.)… Read more >
