Tomato Quinoa Soup

Crock-pot vegetarian chili

  Long overdue recipe coming ‘atcha.  Finally. This one couldn’t be easier guys.  No measurements required.  And it’ll be delicious.  Promise.  Here’s what I did.     1. Cover ~1/4 – 1/3 cup dry beans (I used black and adzuki) with water (about an inch high) for 5 hours on low heat. 2. Working and slow cooking

Still working.  Still eating.    Breakfast: Oatmeal with the works. Lunch: Chop Salad [see below]. Dessert: Ghirardelli’s dark chocolate squares (one with caramel filling, one with raspberry filling) and candied ginger. Snacks: home-made carrot cornbread, salty nuts, Cocomo Joe green joebar. Brocc in the crock

Here’s how dinner turned out.    And here’s how it came to be. Stretching soup

I figured a break from DC posts was due.    This beautiful meal can be made effortlessly – and you probably have all the ingredients in your pantry already!
