Meals I’m excited about

Sometimes I get bummed out when I realize over the course of the day I’ve basically eaten nothing but toast with Earth Balance, bananas with nut butter, and crackers with hummus.  In large quantities.  These foods are delicious and healthy, yes.  But inspired?  Not so much.  Which is why this simple but different lunch made me so very happy.    I got rainbow chard at the farmer’s market and decided I had to use it in more ways than just a salad (or sandwich ingredient).  I’ve done both of those things with it already, but… Read more >

The weekender

That’s the name of the meal I ordered at brunch on Saturday.  Kyle’s parents took us to Real Food Daily, my favorite breakfast spot in Santa Monica.  I love this place so much I’ve stopped linking to it on my restaurants tab because I’ve been at least a dozen times.     My plate’s the one on the upper left. It has two (gluten free) pancakes, scrambled tofu (with onions, tomatoes, & cashew cheese), tempeh bacon, and hash browns.  Holy breakfast right? Color me orange

Here’s a list of my favorite foods that are orange: sweet potatoes butternut squash carrots …and now this dip. I actually set out to re-make my creamy dijon cashew sauce.  I wanted a nut free version – something lighter.  It turned out quite nicely for a low fat food.  Actually it turned out great for any kind of food. Creamy Quinoa with Kale

Quickie veggie dinner with mega protein – check! While the kale simmered in a water and olive oil bath, I prepared the sauce.  I took Sabra roasted red pepper hummus and added nutritional yeast to it, then thinned it out with lemon juice and water.  The more hummus you use, the better. Then I added the (already cooked) quinoa to the pan, cracked in a couple of eggs, scrambled the whole thing, and topped it in the lovely hummus sauce.
