Freezer meals for your summer veggies

I realize this looks like kinda a mess…buuuuut… What can I say? Do you eat with your eyes? No. I created this dish because I had squash for days and thought it would be a good idea to cook some bulk freezer meals so I have healthy home-made stuff on hand. Hello layerzzz. I ended up using 3 summer squash and 4 tomatoes, but you could really use whatever you have on hand…eggplant, zucchini, etc. The top is a corn meal crust, which I probably should have cooked a bit first because it ended up… Read more >

Storing summer bounty

Tomatoes, chard, kale, basil, parsley, zucchini, squash, eggplant, corn, peaches, plums, berries, melon, I could go on and on…   Our kitchen counter used to have a fruit basket that was adequate.  But now that we’re in farm country it’s spilled out onto the counter and beyond!  I love it!    And for the record, we have a really big kitchen counter!  [Yikes, that’s messy] What to do with all this wonderful cheap produce!  Uh, freeze it?  Yep, that’s my plan and I’m sticking to it.    First up, pesto!   I used TONSSSSS of… Read more >

Happy couple & happy goats weekend

Another weekend filled with outings and travel and showing off our little man!   Starting with a leisurely Friday. Since I finally polished off the last of the millionth loaf of banana bread I made, I decided to bake a new somethin’ somethin’.  More on the above [oatmeal caramel creation] later…   This is my new favorite meal.  It’s been on repeat, so don’t be surprised if you keep on seeing it. That’s an egg/avo combo on toasted Essential Baking Co bread with a side of veggies (tomatoes from my garden).   Look I finally… Read more >

Sharing meals with my munchkin

I worked nights this weekend and only got 2 hours of sleep while home during the day, so I make no promises on the clarity or content that follows… I have no idea when I made or ate this lunch bowl.  I don’t even know what day it is. It had Beyond Meat southwest strips, carrots, and avocado.  A really simple chop salad – if you can even call it that!  I’m still loving Beyond Meat.  The southwest flavor isn’t too strong (I was worried it would only be good for a Mexican themed meal,… Read more >

Salted Chocolate Coconut Brownie Bites

I love browsing the raw section of the Co-op but it’s also semi-depressing because I refuse to spend $9 on a bag of coconut macaroons that I will finish off in one sitting (why fight the truth) and could just as easily make myself.  It serves as inspiration though.    Salted Chocolate Coconut Brownie Bites [vegan, gluten free, FODMAPs friendly*] Ingredients: 1 cup raw walnuts 1 cup shredded unsweetened coconut 2 tbsp cocoa powder 2 dates, pitted 2 1/2 tbsp brown rice syrup 1/4 tsp salt (+ more if desired) [if necessary] water Directions: Pulse… Read more >
