Gluten free vegan pizza showdown

On the left is Amy’s dairy free cheeze pizza with a rice crust.  On the right is Udi’s gluten free crust with tomato paste, arugula pesto, and Daiya mozzarella vegan cheese. I tried the Amy’s pizza a couple of weeks ago after an exhausting day.  I was in a bad mood and didn’t want to put any effort into cooking.  And I probably should have looked at the meal’s ingreds closer.   Pros: It’s dairy free and gluten free.  And takes no time to bake.  I made it in the oven following the directions… Read more >

Tempeh & Potato Pesto Salad

Cool or warm, this is an easy tasty dish.  Easy being the key thing if you’d rather be soaking up the summer rays than doing things in the kitchen.  Who wouldn’t?  I’ve said this lots before – I’m not a tempeh lover.  I like it fine, and when restaurants prepare it (correctly) it’s awesome.  But yeah.  It’s not my number one.  That might all change though.  Because I just tried Westsoy’s tempeh and (dare I say it) I could eat this stuff straight up!  No cooking necessary!  And before you say it, yes, I… Read more >

Powerful strong greens

Talk about a lettuce with a kick!  Arugula is something fierce.  I’m not a huge fan, to be honest, but if it’s amongst other greens I don’t mind it. But like I mentioned before, we got a ton from our neighbor, so I had to figure out something to do with it.  I think it’s best paired with meat, but that’s not an option for me, so I cooked it into a couple of veggie stratas.  The first went with Kyle on his drive to Colorado.  The second I made for myself. Arugula Tomato Strata… Read more >

Pesto & Pancakes (not together)

Here’s some of the meals I prepped for last week. If you recall, making bulk grains in the rice cooker was one of the things on the checklist.  I used this wild rice in Kyle’s breakfast burritos (with lentils, salsa, and cheese) and in my lunch salads (with lots of veggies).  And then in this dinner, of course. Pesto Wild Rice [vegan, gluten free, FODMAPs friendly] Ingredients: 2 cups cooked wild rice 1 cup corn 1/2 cup pesto (FODMAPs people omit garlic or use garlic infused olive oil) Directions: Cook rice.  Mix in corn and… Read more >

I just can’t get enough

Maybe it’s just me, but I find it exciting seeing what new (to me) products are available in different areas.  I have been seriously enjoying browsing the shelves of our local co-op and grocery stores (Nugget, Whole Foods).  The prepared foods sections have all kinds of different stuff and there are tons of hippie friendly companies with local distribution!  I love it.  I’m sure it’ll eventually get old – or at least less wondrous – because I was just as enchanted when we first moved to Santa Monica and I had 6 Whole Foods stores… Read more >
