Punkin’ for my punkin’

Soooo, we never got around to carving our pumpkin.   But it didn’t go to waste… Friday afternoon we were housebound while waiting for our wine delivery to come (I had to be home to sign for it since we’d missed the first two attempts). So what did we do?  Played with pumpkin guts. P watched on as I hacked our little sugar pumpkin from Impossible Acres open and scooped out the seeds.  I roasted them – making half savory (salt & pepper) and half sweet (cinnamon & stevia).  [BTW, I did not boil them… Read more >

A real cake and banana baked oatmeal

Buying bananas at Costco is hard to pass up (so cheap!) but they all go ripe at the same time.  All 150 of them.  So one second you have a bunch of green fruit and then you blink and find yourself with a million pounds of brown spotted bananas to use up.  Stat.  I’ve been adding them to everything.  And freezing them for smoothies.  I have 2 loaves of banana bread in my freezer.  I have pumpkin banana bread in the fridge.  I have made gluten free banana pancakes for myself twice.   These… Read more >

Labor Day weekend

Saturday and Sunday were weekend warrior status for me (boo).  I work every 3rd weekend at the hospital which is a nice change from my previous jobs that were every other.  I guess that’s one of the big differences between full time and part time.  But it was still a bummer since the rest of the world had long weekend. Weekend in Chico (woo!)

Kyle and his friends (who all grew up together in Chico) always say “woooo!” after anyone mentions Chico, so it’s become a habit for me too.  So that’s what the post title is about. I’ve written about Chico visits before, and we usually got to the same spots, so I won’t elaborate too much on the food. Friday night I had my fantasy draft and Kyle went to poker night. In spite of my half assed research, I came out with a decent team (I hope?) but it was very stressful…hence the chocolate wrappers.  … Read more >

Happy couple & happy goats weekend

Another weekend filled with outings and travel and showing off our little man!   Starting with a leisurely Friday. Since I finally polished off the last of the millionth loaf of banana bread I made, I decided to bake a new somethin’ somethin’.  More on the above [oatmeal caramel creation] later…   This is my new favorite meal.  It’s been on repeat, so don’t be surprised if you keep on seeing it. That’s an egg/avo combo on toasted Essential Baking Co bread with a side of veggies (tomatoes from my garden).   Look I finally… Read more >
