Father’s Day weekend

Another fun one.  Saturdays and Sundays are my faves because I get to spend them with both my boys. Friday evening Kyle BBQ-ed some shrimp and corn and I made a salad. I marinated 2 pounds of shrimp in Garlic Gold red wine vinaigrette.  It contains garlic infused olive oil and red wine and Italian seasonings.  No garlic, so it’s totally FODMAPs friendly.  And the shrimp were freakin’ delish. We got way too much.  Clearly.  But that means easy lunch leftovers.  Before is above, after is below.  Yeah, I bought cooked shrimp again.  I’m a… Read more >

House-warming & Memorial weekend

This past (long) weekend was important for family time because Kyle headed back out of town for business on Tuesday morning (after being away the previous week).  Gotta soak it up for the few days he’s around!  I’d be lying if I said it wasn’t hard, but since his start-up is young and fragile, it’s important to take advantage of these opportunities so the company will continue to thrive.  Growing pains are good.  As I type this he is en route to Colorado…10 hours into the 18.5 hour drive.  Ouch. So anyway.  Saturday. He slept… Read more >

Bacon!

Where to begin, where to begin… How about here. ImadebaconoutofcoconutandIdon’tevenknowhowittastesthisgood soI’mkindafreakingoutoverit. Yes bacon.  Out of coconut.  It’s insane.  I don’t even get it but I’m going to stop trying to analyze how this magic occurred and just enjoy it. You should too.  Seriously.  I would NOT be this dramatic if it was mediocre. Coconut “Bacon” [vegan, gluten free, FODMAPs friendly] Ingredients: 1 1/2 cups unsweetened coconut flakes 1 tbsp tamari 1 tbsp maple syrup 1 tsp sesame oil 1/2 tsp liquid smoke pinch of sea salt Directions: Pre-heat oven to 325 degrees F. Mix all… Read more >

Sriracha brussels & quinoa

There’s nothing I love more than being gifted food.  I’m a simple girl foodie. Seriously.  To all the people reading this who plan on buying me presents in the future, take note.  [Crickets] My mother in law actually traveled with Brussels sprouts in her luggage.  And then left them with me. Ummm…I’m not sure who’s the bigger weirdo in this scenario…her for bringing produce as a carry-on, or me for being over the moon about it…close call. I think Brussels sprouts are delish.  I think people who don’t like them (ahem, Kyle) are close-minded losers… Read more >

Outside eating weekend

We had such awesome weather this weekend (status quo for Nor Cal, but still worth noting) so we really made the most of it.  Lots of outdoor time!   Friday morning started with Earth Butter-ed toast and a fried egg. <— yup, that’s a bite mark out of the toast For lunch I had a big salad with greens, quinoa, carrots, tomatoes, and peanuts with peanut soy dressing.  Since I finished off the rest of the PB I just made the dressing in the jar.   I broke up P and his girlfriend Sophie for… Read more >
