Ok, actually being vegan in Mexico is pretty impossible, so I’ve made a few compromises for the sake of enjoying the vacation…let’s just say, chips and guac will never get old.  But I’m getting ahead of myself. Cheers to 2009, but jeers to leaving home to return to snow. I packed a TON of plane food the night before (the LAST thing I want is to be stranded/delayed in an airport without food options). With the other end piece of the Alfaro’s bread, the rest of the veggie cheddar shreds, mushrooms, and a fresh, organic tomato, I made a pretty gourmet sando. Check it out! Good morning from the west coast (aka the BEST coast)!! I started the day off as any good day should begin, with caffeine in a fun mug. I woke up bright and early and decided to play with my new camera. Here’s some shots of the backyard… I love the sun beams coming through the trees behind the creek. I definitely miss having a yard (and space in general) in Manhattan, so it’s nice to go home and enjoy nature. (Unpictured to the left) is the tire swing and the 2 bird feeders. Last night I definitely woke up 6 times to pee…it might have something to do with my bedtime fluid loading (I’m really annoyed by this cold).Right before I went to bed I had a cup of tea and a glass of pink lemonade flavored Emergen-C.
