Easy Peasy Baba Ganoush

This meal was entirely centered around the smallest thing on the dish.  The babaganoush! If you want to make a real legit baba ganoush, David Lebovitz is your man.  I had read his recipe long ago and thought I could go off memory.  I totally botched it (forgetting almost every ingredient aside from the eggplant) but the main thing I took away from his recipe (and did implement in my version) was charring the skin first. We have an electric coil stove which is not ideal, but I made it work.  Kyle came home… Read more >

I used to do this every day

Holy crap I actually took pictures of everything I ate in a 24 hour period!  I can’t believe I used to do this every single day… Starting with breakfast.    I slept in til 9 but if I didn’t have a child I would have hidden under the sheets until at least noon.  I was still recovering from night shift shenanigans and pacman wasn’t pleased.  Given that, both of our appetites were out of control.  I fed him first of course, but then got right to work on my own grub. Freezer meals for your summer veggies

I realize this looks like kinda a mess…buuuuut… What can I say? Do you eat with your eyes? No. I created this dish because I had squash for days and thought it would be a good idea to cook some bulk freezer meals so I have healthy home-made stuff on hand. Hello layerzzz. I ended up using 3 summer squash and 4 tomatoes, but you could really use whatever you have on hand…eggplant, zucchini, etc. The top is a corn meal crust, which I probably should have cooked a bit first because it ended up… Read more >

San Fran-iversary weekend

I realize this post is hardly timely.  We didn’t get back from the city until Monday evening and then I worked two nights in a row though…sooo…what can you do?  Truthfully, my weekend recaps are my own selfish way of documenting our memories forever and ever.  If others enjoy them, great!    So let’s back track to Saturday.  I was recovering from a few night shifts so we kept the day mellow.  I ate at odd times and didn’t get close to capturing everything I ate on film.  Did you know sleep deprivation can make… Read more >

Storing summer bounty

Tomatoes, chard, kale, basil, parsley, zucchini, squash, eggplant, corn, peaches, plums, berries, melon, I could go on and on…   Our kitchen counter used to have a fruit basket that was adequate.  But now that we’re in farm country it’s spilled out onto the counter and beyond!  I love it!    And for the record, we have a really big kitchen counter!  [Yikes, that’s messy] What to do with all this wonderful cheap produce!  Uh, freeze it?  Yep, that’s my plan and I’m sticking to it.    First up, pesto!   I used TONSSSSS of… Read more >
