A big day

Kyle’s on his way home!  Weee!  After an eternity on my own, I’m re-he-he-heeeeally looking forward to his return. [edited to add: the van broke down and he’s stuck in Albuquerque sorting out the game plan to fix it, so who knows what this means for his return home] Let me just photo bomb you with some recent meals… Carrots, green grapes, Mary’s Gone crackers, Redwood Hill Farm smoked cheddar goat cheese, hard boiled eggs, local smoked almonds (from the Co-op). Two themes

When my hands are tied up and time is of the essence, I’ve been relying pretty heavily on two things. Theme number one: snack plates Veggies, meatless meatballs, Stubb’s BBQ sauce, Mary’s Gone twigs, sweet potatoes, daiya cheese, GF tortillas… This was a meatless meatball round (WF / 365 brand is bomb).  I go through phases with faux proteins.  Beyond Meat strips are a fave.  So are hard boiled eggs.  But sometimes I just stick to nuts instead of a “meat” snack item. Powerful strong greens

Talk about a lettuce with a kick!  Arugula is something fierce.  I’m not a huge fan, to be honest, but if it’s amongst other greens I don’t mind it. PBBJ

Yup.   I did this. I took a photo of a peanut butter and jelly sandwich. But trust me, it was no ordinary PB&J. Udi’s GF bread. Pacific Beach organic peanut butter. Mom’s home-made raspberry jam. And bacon!!!!!!!!!!   Question: When will it end? House-warming & Memorial weekend

This past (long) weekend was important for family time because Kyle headed back out of town for business on Tuesday morning (after being away the previous week).  Gotta soak it up for the few days he’s around!  I’d be lying if I said it wasn’t hard, but since his start-up is young and fragile, it’s important to take advantage of these opportunities so the company will continue to thrive.  Growing pains are good.  As I type this he is en route to Colorado…10 hours into the 18.5 hour drive.  Ouch.
