Weekend eats

We tried to run and play tennis on Saturday morning but it was so windy we had to call an end to our terrible attempt.  Running against the wind with the heavy double stroller acting like a sail was extreme.  I was glad to be home and warm up in the shower.  It’s feeling like Fall these days!  At least in the mornings with the chilly darkness. I had zucchini banana bread with cashew butter for breakfast.  This isn’t my best loaf, but it gets the job done. I was unsure of what to make… Read more >

Ready or Not

This week was kinda a downer.  The mood in Nor Cal is depressing and I’m not sure if the kids can sense it, but I feel like they know something is up.  P’s school has kept them inside due to poor air quality for most of the week and several of our other activities have been cancelled as well.  The winds are changing constantly though, so I’m googling AQI scores in our zip code all day long to try to keep us safe and healthy.  The winds are really making it hard for fire fighters… Read more >

Everyone’s different breakfasts

Kyle requested a breakfast egg thing this week with sausage, so I threw every veggie in the fridge at him along with it. Here’s how I made this beauty: 12 oz broccoli florets, cut into small pieces 1 medium bell pepper, diced 1/4 onion, diced 2 sausages, sliced into half moons 8 eggs 2 cups cheese, shredded 2 cups milk 1 cup salsa salt and pepper Preheat the oven to 350 degrees F.  Combine everything in a large mixing bowl and stir.  Pour into a large greased casserole pan. Bake for 40-45 minutes (until eggs… Read more >

Eating in a rush

I really don’t like eating in a rush, but it’s inevitably how I consume 75% of my meals.  Breakfast is sometimes halfway peaceful, depending on how quickly the kids eat their own meals.  But lunch is typically the only shot I have at full on sitting down serenity. This is because I choose to wait until the kids are fed and asleep before eating my own lunch.  It’s so worth it.  P doesn’t nap, so he occasionally comes to chat and hang out (help me cook dinner) during his quiet time, but for the most… Read more >

Earth Wind and Fire

Nor Cal is ablaze and I know too many people directly affected.  This is scary stuff.  🙁  It didn’t help that Sunday and Monday were suuuper windy.  Like 40+ mph winds!  What the heck?  Is there no where in this country that you can escape the elements? And before you all go thinking I’m super depressed, I will tell you right now, I’m fine and don’t worry about me. I’m just musing on the state of affairs because it’s what we do as humans.  And even though things are not so great right now in… Read more >
