What They Ate

99% of the time I make the kids pancakes or oatmeal for breakfast.  I make the batter for the pancakes the night before.  It has 1 mashed banana, 1 egg, ~1 cup of some kind of flour, 1-2 tbsp flax meal, 1/2 tsp baking soda, pinch of salt, and almond milk to reach the right consistency. When I make oatmeal I add a ton of stuff in – raisins, seeds (chia, sunflower, pepitas), nuts (almonds, or walnuts), cinnamon or vanilla, and shredded coconut.  Shredded coconut is Pattycakes’ favorite. You guys are the best!  I was so excited to get back to regular blogging and then I got all these lovely comments and questions and inspiration…lots of subjects to blog about now! First order of business is writing down the recipe for the next time I make this baked banana thing. It makes two breakfasts (for me) with cashew butter loaded on top. Making food for my first

If I told you I made ants on a log last weekend, you would probably think it was for my wee ones. Nope! 😉 Because snacking aint easy.  I hook him up even on the weekends. Do you pack food to bring to work?  Obviously I don’t pack food for myself, but I pack Kyle’s food every day.  Half of the time he eats breakfast here, but if he needs a mobile breakfast (like on the train or if he has an early call at the office) then I pack him breakfast too. Shall I try to make this a regular thing?  I think I might.  Maybe I’ll do the kids’ meals every once in a while. They eat pretty similar to me, with the exception of lunch.  They probably wouldn’t find my kale repetition as delicious. Here’s a hunk of banana bread with cashew butter to start the day. Remember the WIAW days of blogging?  That style really fell out of favor didn’t it now…or maybe everyone realized how hard it is to keep up with and decided to embrace a new approach.  Those “what I ate” style posts are my favorites to read though!
