Gluten free bread maker bread 2.0

A second version of my previous baking success…means I’m basically a pastry chef now right?  HA!  Not even.  I’m pretty proud of this version though and have already remade it. Next up is trial and error with substitutions.  Hopefully a xanthan gum free one and maybe even an egg alternative one??  Those are my Feb goals. The weekly menu

Monday was a very necessary holiday after Saturday and Sunday were not very restful (Kyle was gone Saturday and then we all left town for our Chico visit on Sunday).  I try to soak up Kyle’s days at home like crazy.  This short week was SO great.  It was rainy on and off so we were limited in our activities and that can sometimes lead to quite a bit of energy bottled up indoors.  But we totally managed to make the week fantastic, which I think was in large part due to having Monday off… Read more >

Sunday night I made this pork soup which has graced our menu (and the blog) a few times already.  I made a few swaps based on the ingredients we had on hand and what was available in the store (WF was out of ground pork!) but it’s a forgiving recipe in that way.  As long as you stick to the basic flavors with seasonings and whatnot, it is super delicious however you make it! Hummus sauce chilaquiles

You could certainly go a bunch of directions with this recipe, but I kept it vegan because…LOOK!!! Chilaquiles are obviously a traditional Mexican dish, so this is not in the realm of authentic.  However, I wanted to tweak the idea of a dish with fried tortilla strip topped with a spicy tomato sauce and cheese (which is what chilaquiles are) using a hummus sauce as the base.
