Professional weekending

I woke up Saturday sooo excited. a) Friends in town!  Hooray!! b) Golfing date! c) A non-work weekend!  Finally!! [Whoa exclamation points] You probably can’t tell the volume of Earth Balance in either of these photos, but since the bread was home-made it soaked it all up like a sponge.  There was probably a quarter of a cup of butter.  Pretty awesome, huh. Cleaning and grilling

  This is what productive looks like.  I love a nice clean house! Kyle and I celebrated our hard work with some grillin’. I quick flip through this book, and the grilled tomato suns caught my eye.  The cook time was nice and speedy (we were starving).   I’d say we did a damn fine job of replicating the cookbook photo. I’ve got a pile-up of products to share.  As usual, some were good, some were okay, and some were losers. 1. Zing chocolate peanut butter bar Kyle stole this from me, but took a photo (which means he knew he was in the for-Elise-only bar stash).  In any event, here is his review: Zing bar was good.  Tastes like a tiger’s milk bar (for anyone that matters to) but better and not as chalky.  Fluffy enough to be chewy but hearty enough to be satiating. 2. Sleep eating

  Despite the fact that I had to leave the party early because I was working night shift (a situation made even more depressing due to the fact that I missed a call to get the day off because the hospital was overstaffed), I still had a nice day.   With friends and food and outdoor fun. A veggie’s best friend

At the end of the day I want simple but delicious.  Fresh fare is my preference, but sometimes it’s not in the cards.  Enter: the freezer. There are a lot of negative associations with frozen food, but done right they can be your best friend. Leftovers – any time you make a lasagnas or casseroles, make WAY more than you will eat and portion the extras into tupperware.  By freezing 2/3 of the dish from the get-go you preserve the freshness of the dish and guarantee yourself a future home cooked meal.
