It’s September

You know you’re living the good life when a praying mantis occupies a large chunk of your afternoon…

How about I kick off this post backwards with the most important meal of the day…DESSERT.  Is dessert a meal?  I guess it is if you have it the amount I do…MEAL IT IS!

My friend bought me these because I did her a favor and they are SOOOOO GOOD!!  There are 12 in total, soooo who has guesses on how long they last??

For the people who have been asking me to take a photo of the brand of smoked salmon I get from Costco

Here it is!  Coastal Harbor Honey Roasted Smoked Salmon.  I can’t seem to find it online, so I’m not sure if you can find it anywhere else or if other Costco stores even carry it, but definitely look for it (it’s perfection!).

I buy two at a time and keep one in the freezer.  🙂

 This Grand Ewe Uniekaas was a newbie that I managed to plow my way through over the course of the week’s snickety snack platters.

Here are a few more meals and musings from the week…

I treated the chickadees to Nugget salad bar after picking Mr P up from school one day…

They got random odds and ends – grapes, bell peppers, fried chicken tenders, olives, a few different beans, and croutons.

I got a kale and slaw Thai salad from the prepared foods bar, but jazzed it up once we got home…adding (more) roasted cashews, some Thai dressing (Nugget’s store made soy sesame dressing), and the last of some Lundberg’s rice chips all crushed up.

Nugget also got the rest of my bank account a few days later thanks to their secret special of the week.

I went for it.

Anyway, back to Wednesday.  Have I mentioned our neighborhood public school is an immersion program?  Fingers crossed as we embark on this adventure!!

We went to farmer’s market on Wednesday night and it was the best.  The weather was perfect and all of Davis seemed to be out celebrating the beginning of Fall and all it’s back to school glory.  A friend brought me a young coconut to hack open (with her fancy tools) and then V helped me drink the water (but mostly eat the fresh meat from the top).  Yummy!  I have good friends.

In order to get to school on time (8:15!!!) breakfast has to be FASTER than fast.  We already had a speedy am routine prior to school starting but wow do we really need to haul to make things happen on time.  So I came up with a muffin that accomplishes everything at once – protein (eggs!), fast acting carbs (banana), long lasting carbs (oats) and not much else!!!  It had three huge super ripe bananas, 4 eggs, 1/3 cup oats, 1/3 cup coconut oil, a splash of maple syrup and slightly larger splash of almond milk.  Baked for ~30 minutes at 350 degrees F.

They are more eggy than normal quick bread types of recipes (which was the idea) and the kids seem to like them but the best part of all is that they can be eaten solo and that makes breakfasting about as fast as it can get.  Even with slowwwww pokes for children.

It’s an 11 minute run to school.  I did it once with the double, but then drove the rest of the time.  V was happy to do a long run with me after drop off one day because I put on the Frozen soundtrack.

Next up.  Taco night.

But mine was shell-less because I only had four shells so I gave them to the kids (Kyle wasn’t home).  The rest of the salad was romaine, cherry tomatoes (from the garden), cotija, shredded beef, avo, lime juice, and plain cashew yogurt.  The cashew yogurt is a pretty good stand in for sour cream to be honest. I had a bunch of tortilla chips with it too.  That was the kids’ idea actually because they felt bad that I didn’t get a crunchy shell. My kids are nice and all but the fact that they realized I was making a sacrifice for them and came up with a solution to make me feel better was so unexpectedly thoughtful!

The thai salad I got from Nugget lasted me two meals, so this is just a repeat lunch situation – just as good the second time around.

This was the first stroller strides play group that I ran and it went so well.  Just a peek into the new role(s) I’m stepping into.

Next week is just as crazy as this one was with V starting school and even more social activities that I’m in charge of, but I’m determined to continue to blog as best as I can…and I know I’m still not being very forthcoming with all that’s going on…but I’ll get there.  I just have to figure out how much privacy I want to maintain moving forward.

    Both my boys go to a Spanish immersion school. The first few weeks can be rough, but it’s amazing how quickly they catch on. Now they’re in 4th and 6th grade and fluent Spanish speakers in an English only home!

    THANK YOU SO MUCH FOR SHARING. It’s wonderful hearing things like this 🙂
    He has always seemed put out when Kyle and I talk to him in Spanish at home (or not so much talk to him but then go and try to expound upon our sentences and teach him follow up Spanish lessons…) so now that he has started school we aren’t pushing it at all at home (to give him a break from it). But already he is asking us how to say this and that more and more at home so I’m very encouraged even if it’s hard. 🙂

    Long time reader, first time commenter… I went to a Spanish Immersion program from K through 12th grade here in Alaska. It was the best thing my parents ever did for me and my siblings (and they’re pretty great so that’s saying a lot!) I continued it though college and double majored in nursing and Spanish. I use it all the time as a nurse, and it has been a huge part of my life. Like previous commenter said, it can be challenging (especially for parents if you are having trouble helping with homework) but I think since you and Kyle speak the language then that shouldn’t be an issue. Even if he has some bad days, you (and P) won’t regret it!

    I Congratulations on all the exciting new things , whatever they are! I hope we get to hear, and come along on the journey. I’ve enjoyed your big for so long. I found it as a vegan blog, but have learned much about healthy eating, refereed moms of children with allergies, and get so many good recipes, for the omnivore significant other, and my vegan self 🙂 Thank you!

    That’s really exciting and totally awesome P is going to an immersion school! I took a lot of spanish throughout school and it really comes in handy on a regular basis.
