Kale vs. scale

My meals are breaking my back!  Fortunately, I have learned proper posture (even if I had to learn the hard way).  In all honesty though, nursing hasn’t re-aggravated my back pain in quite some time because I’ve been SO cautious in practicing good body mechanics.

I’m happy to report that lugging all this loot on my back while biking to work didn’t hurt either.  But it really is heavy.  By the time I squeeze the zipper over my food, scrubs, klean kanteen, and coffee mug, my backpack is easily tipping the scales into the double digits.

At least my kale salad was on the lighter side.

And by “lighter” I mean in weight only because it was definitely filling.  I tried to replicate the lemon dressing I got on my True Food Kitchen kale salad.  It wasn’t quite there, but it was definitely delicious (maybe a bit too heavy in the extra virgin olive oil department).  The salad ingredients were very simple and included fresh apricots, dried cranberries, avocado and orange zest.

Snack options aplenty…dried fruit, dehydrated apple rings, salty almonds.

People.  Life can go on.  My candied ginger stash has been (momentarily) repleted.  I’m trying to ration them, but it’s so hard!  Kyle said he had to beg a WF employee to check in the back for these and they were the last two.  It’s gettin’ real in the Whole Foods parking lot!

    I need to start practicing better body mechanics. Any tips? My boyfriend always pulls my shoulders back when he’s standing behind me and I realize how terrible my posture is! I also need to get my salad on far more often. Thanks for the creative ideas for add-ins. And I’d love dressing recipes if you have em!

    Those waffles are tempting me every time I open your blog! Yikes girl that’s a lot of carrying on the bike especially when the bike can aggravate a back anyway! LOL About asking guy in the back done that many times sometimes you get what you want. Let’s hope they lodged your complaint and get the ginger back ASAP.

    Love that video- so true at my local WF!

    Have you thought about getting panniers (the bike bags) for your bike. Made all the difference in my bike commute. AND, your back doesn’t get sweaty, which is nice. You can get them pretty cheap at REI if you don’t need waterproof (which I would imagine is ok for LA, not so for Chicago!) Definitely keeps your back from hurting too.

    i am a HUGE candied ginger fiend too. my favorite candied ginger is the Trader Joe’s uncrystallized candied ginger, and for awhile all the stores i went to were totally out of stock! so then i bought candied ginger from every other store (including whole foods) but for me nothing compared to the TJ’s one – thankfully its back in stock and im back to eating it everyday =)
