I didn’t mean to hold out on you after that giveaway teaser in my last post.  No worries, though, I’m not flaky when it comes to hooking up my readers.  Or am I?

Har. Har.  I couldn’t resist the pun, sorry.  [I almost deleted it, it’s so bad]

How much do I love coconut?  Let me count the ways… (1) flakes, (2) shreds, (3) chips, (4) butter, (5) oil, and that’s just the beginning…

They enhance the simplest dishes…cereal, granola, oats, cakes, cookies, bars, pancakes…you get the idea.

Clearly, the common denominator (yeah, math vocab!) in all these delicious recipes is coconut

Just last month I made Tropical Fruit Power Balls, which have been hanging out in the freezer doubling as cookie dough on the late night.  And it’s the rich coconut flavor that makes my taste buds scream for more after each and every bite.

Obviously I want to share.  And Tropical Traditions wants to as well.  Want to know what’s at stake?  Did you see number three up there?  Coconut chips.  Yeah.  Chips.  As in, no-need-to-even-add-these-to-a-recipe-they-are-amazing-on-their-own coconut chips.  I won’t deny it – I’ve had them plain.  It’s hard not to because the smell is intoxicating.  One whiff and you’re on a tropical island.

    I, too, used to love fresh coconut when I was younger. My dad would buy them all the time. I didn’t realize the health benefits until just recently though! I haven’t gotten my hands on any coconut butter or oil but plan to very soon. I love sprinkling it on oats, or even having it in the form of ice cream or yogurt, especially lately. Definitely would love having fresh coconut again!

    I’m mildly obsessed with coconut. I bake with the flour, add the extract to everything from oats to tea, have replaced cow’s milk with So Delicious coconut milk and love coconut/curry type dishes. My favorite recipe has to be protein pancakes with banana, pineapple and coconut oil. SO good!

    I love coconut in all forms. BUT, I recently started making cultured coconut yogurt from fresh young Thai coconuts. All raw, probiotic packed, and omg I’ve never tasted anything so vegan-creamy-licious. A-MAZING. Have you ever played with home ferments? You should totally get into it! Especially considering your love of kombucha. You could save a small fortune if you brewed at home. I have tutorials on my blog, if you’re interested. =) (no that is not a creepy self-promo, just trying to be helpful!)

    I was introduced to my favourite coconut recipe this Christmas at a hostel in Prague by a couple of Australian girls! I present: snowballs! (Sorry, it’s got cream in it)

    1. Melt 500g white chocolate with 200g of cream, mix well
    2. Add 2 tablespoons of lemon juice
    3. Let set in fridge for a couple of hours
    4. Shape into little inch-wide balls and roll in coconut

    Maybe its just the bag I bought, but coconut doesn’t seem to have much flavor to me! If I put it in something, I have to really really search for it before I find it… but I love coconutty things. My favorite coconut recipe would have to be those chocolate cookie dough ball things rolled in shredded coconut. We have them around Christmas time and call them Snowballs! They taste great with almost any cookie dough… I especially love oatmeal-cranberry. Yumm.

    My (current) favorite coconut recipe is one from the vegan cookbook “Appetite for reduction”, it is a spicy black eyed pea curry that uses coconut milk and a WHOLE habernero… delish, but while chopping it I accidentally rubbed my eyebrow, and received an instant spice burn. Oh well, it was well worth the curry!

    Oh yeah, my husband has a super sensitive stomach and is paranoid like woah. He won’t drink my home brew. Or my water kefir, or eat my sauerkraut or kimchi or anything else that sits on the counter at room temperature for days (put like that, can you blame him?). He ate some of my cultured dill pickles but honestly, I don’t think he knew they were homemade. Ha!

    I treat coconut the same way as hummus and cinnamon these days: I throw it on just about ANYTHING! My favourite way is in my breakfast of overnight oats: cinnamon and oats (in that order), greek yoghurt, more cinnamon, coconut, banana, more coconut, more cinnamon, peanut butter and raisins. Then top with coconut. and a little more. Happy tummy!

    Very much so! It has definitely introduced me to a whole bunch of foods I would have never have known what to do with before, (I tried her mashed Yuca with lime, I was intimidated by the weird looking root when I picked up at the store, but it was amazing!) and I think you might be interested in some of her hummus variations (pizza, jalapeno- cilantro, roasted red pepper & katalmata… yum!). The recipes are all very creative, delicious and her attitude and comments are sure to bring a smile. If you can find it I would recommend picking it up, I think you would enjoy it!
