Last day of September

I thought this was going to be the last tomato harvest but I was wrong…

A few days after picking all of these I went to rip out the plant…

I TOLD YOU it is taking over the yard!  It’s a monster!

Only then the forecast changed and there’s not supposed to be any rain now.  WOMP WOMP.  Not that I’m complaining about the rain going away.  That part is fine by me.

So I picked another 3 pints.

And made two more jars of creamy vegan vodka sauce to freeze.

It’s all stuff I have on hand, plus the kids were both in school, so I was really enjoying the time to mindlessly chop, saute, and blend while listening to a podcast.

I know I mentioned The Teacher’s Pet already but if you haven’t started it yet GO LISTEN.  I was already in a rage about the current Supreme Court situation, so hearing another example of the hideous treatment of a woman, mainly at the hands of white men turning a blind eye, got me even more fired up.  You guys, I could hardly think straight last week, let alone come onto the internet and blog about food, I was so upset.  What is going on right now?  This is an outrage and anyone who doesn’t see it that way should consider taking a look in the mirror and figuring out a way to practice empathy.

Anyway, our freezer is even more stocked now.

Creamy dreamy cashew tomato bliss.

Go enjoy the last day of September.  Peace out!
