Orange and green

Kicked off yet another Monday on the right foot…with a pile of produce. I can barely keep up but it’s not exactly something I’m complaining about.

I juiced a crap ton of it right away that night, but the juice was extra extra green (if you know what I mean) so I went to pick some tangerines from the yard to sweeten it up a bit.

Much bettah!

This random lunch salad had kale massaged with balsamic vinaigrette, topped in avo and candied walnuts with carrots and smoked goat cheddar on the side.

We made a snack out of the corn kernels we got from the CSA. They were freshly shucked from the cob the day before and the kids couldn’t wait any longer to make them. They are smaller than the ones you usually get from the store, but popped up just the same. So yum.

I made pizza for dinner using a pair of pumpkin stuffed bolani (Afghan flatbread) as crusts for the kids. I have had them in the freezer for-eh-ver. My pizza (gluten free by Daiya) was also from the freezer. I just added pepperoni. It was meh. The cheese didn’t melt and the crust was cardboard. I ate 1/2 of it and saved the rest for the kids’ lunches the next day. So disappointing. The bolani looked way better and the kids loved it and had no clue it wasn’t pizza.

Now…what to do with this fennel while Kyle is out of town…because unlike the popcorn I don’t think the kids have much interest in it!
