Staycation weekend

It’s starting to feel like summahhhhhh! I don’t want to jinx it by writing it out, because we’ve had several rainy days recently, but we also finally broke into the triple digit temps, so I feel pretty pretty prettyyyyyy good that the weather is here to stay. Bulk pantry

The Davis co-op underwent a major (and much needed in my humble opinion) revamp this Winter and now that it’s all finished and looking so fabulous, they had a few sales for members! The new store layout was a thank you enough for me, but I’ll take and extra 10% too if it’s being offered! I did it! I spent (some of) the weekend getting really organized and meal planning and I prepped SO WELL that this week’s food was completely heavenly. So many veggies, so much time

There are so many greens in my life right now! I don’t know why it didn’t occur to me sooner, but now the kids are helping eat up the CSA goodies in their lunches. I give them plenty of veggies throughout the day, but I had gotten in the routine of the usual carrot, broccoli, green bean routine… So instead of that, I made them an Asian stir fry with two heads of bok choy that I was eager to use, as well as edamame (which they love) and then served it over brown rice…. Most of the week

Before I got around to making my next loaf of persimmon bread, we had to get through this baked oatmeal. It didn’t take long though. And by Wednesday everyone was fighting over this again. My brekkies have been light, as I mentioned before, mainly liquids. And thanks to my overflowing CSA box that I got Monday I was able to make enough juice for at least three days.
