Birthday weekend for mom

I realize it’s pretty late to be recapping last weekend but I’m going to do it anyway because (a) these are my favorite posts to read and write and (b) my sister loves feeling in the loop with the family goings-on.  So.  This past weekend we went to visit my parents to celebrate my mom’s birthday.  I thought we were going to have to cancel because P got a GI bug last week that was annihilating him but he turned a corner on Saturday.  Thank goodness.  Poor baby was trying his best to be happy… Read more >

Single serving waffle

Remember how I turned into an egg once I got pregnant?  Since then it’s been savory breakfasts 99% of the time.  Fried eggs with a side of fried eggs please.  Until last week when my body randomly decided waffles and banana bread were the only way to start the day. Well okay then! At first, waffles may seem a labor intensive breakfast choice.  But actually, they’re not!  Way easier than pancakes!  You pour it in and go about your business in the kitchen and it tells you once it’s done…sooo…winning!  I also should share the… Read more >

My highlights: weeks 22 & 23

My little gardening buddy. cookies + ice cream + downton abbey = heaven What are the chances we would move from a house with a cherry tree to ANOTHER house with a cherry tree?!  These are technically from our neighbors tree, but a lot of the branches are in our yard, so yay!  P liked them too. Water baby.   Seriously lovin’ on the baby pool.   I want a rash guard for me.  Seems way easier than sunscreen. We had so many leftovers after Memorial Day I basically had them for lunch all week.   Lots of… Read more >

Tweaking it

My baby quick bread has been through the ringer in terms of testing and what I’ve decided is that the bananas’ ripeness (and how much I mash/whip them) is the variable that I can’t account for…and the one that can make or break the texture. I used 3 suuuuuuuper ripe bananas for this loaf and it was perfect.  Moist enough for P.  Sweet without added sugar.  Sturdy enough to be sliced and eaten by me or P (and come out of the pan in one piece!).  And, ummm, delicious, obviously. This version differs from the previous… Read more >

Mini meal plan

Pacman likes to eat.  And I like cooking.  We are a good team. His meal plan typically goes something like this: Wake-up – bottle with hemp milk Breakfast – fruit, home-made bread, eggs scrambled with greens, puffs Post AM nap – bottle with water Lunch – fruit, veggies, puree mash-up Post PM nap – bottle with water Dinner – meat, veggies, fruit, avocado, pasta/puffs Bed time – bottle with hemp milk Breakfast is his biggest meal by far, and lunch is his smallest.  Dinner is usually comprised of leftovers from his earlier meals and parts of our dinner since I feed… Read more >
