Pot-ay-toes, pot-ah-toes

Since we came home from Tahoe with a bag of (leftover) potatoes, I’ve been making lots of potato recipes. In addition to the breakfast hash browns from Christmas morning, I made Ashley’s salt & vinegar kale mashed potatoes.   The recipe is awesome.  I paired it with fish (we had one filet of each cod and salmon in the freezer).  I cooked the potatoes in the slow cooker because it made them super easy to mash later on (I used a wooden spoon!).  I nixed the garlic (fodmaps) and used olive oil instead of ghee. … Read more >

Nuts and dairy and soy, oh my!

I’m going to gloss over this because I want to update you all (so when I reference dietary things in the future you know why and what is going on) but I don’t necessarily want to discuss the details because it’s my son’s life and I want to respect his privacy.  His blood work revealed several allergies, including peanuts and sesame seeds. Additionally, he’s allergic to wheat, soy, cashews (therefore, tree nuts), and dairy. He is NOT allergic to eggs, fish, shellfish, or walnuts.  So yeah, this is crazy.  At first I was really overwhelmed,… Read more >

Christmas 2013

Round 2!  Actually, if you count the Thanksmas we had in Tahoe earlier in December with Kyle’s family, this is really our third Christmas.    No such thing as too much celebrating, right?!  Especially when it’s baby’s first Christmas. We got to my parents’ house just in time for a few cookies.  Which provided the perfect fuel for the Niners’ game. My little cheerleader fell asleep on my shoulder during the game so I wasn’t much help in preparing dinner.   After we put him down we had a mini facetime sesh with my sis… Read more >

Davis Christmas weekend

Everyone says the holidays are so much better through a child’s eyes but it’s absolutely true.  I feel so cliché, but my first Christmas as a mom was just about the best one I’ve ever had.    The other cliché about kids enjoying the wrapping more than the actual present is also 100% accurate.  Tissue paper > anything and everything.   Last weekend, Kyle and I celebrated our own holiday with just the three of us here in Davis on Sunday.  Santa came and filled our stockings and we exchanged our gifts to each other. … Read more >

Savory Quick Bread

I go back and forth in terms of breakfast cravings – sweet or savory.  I love quick breads (especially this banana bread), but when I want a savory breakfast I’m torn.  For some weird reason, the idea of making a savory quick bread never occurred to me. Why not?  There are veggie muffins and stratas and the likes, so why not a savory quick bread?!?  Duh, right?    I totally almost messed this guy up.  I forgot the egg the first time around (fortunately before it went into the oven, but not before I had… Read more >
