Egg and tofu wrap
At first I thought I just wanted a simple breakfast wrap. Spinach, fried egg, Rudi’s GF tortilla. But it looked a little sad (despite the absolutely perfect fried egg), so I took a fridge survey, and decided to make a mustard tofu salad too. It had 1/4 block of extra firm tofu, dijon mustard, honey mustard, plain almond milk, and lemon juice. It was a little bit runny, but I wasn’t too bothered by it.
