For the avocado lovers

I ate two avocados today.  For breakfast I had toast with avocado and a pinch of salt.  For lunch I had a salad with a lot of avocado.  For dinner I had a stir fry topped in avocado. I’m giving away the BEST supplements

Recipe first, giveaway second.  Cool? Or you can skip ahead to the end if you want.  I won’t be offended. I was trying to make meatless meatballs, but they weren’t really cooperating, so instead we got sliders.  The recipe still needs some work though (in my opinion).  They taste good, so that’s not the issue.  And for anyone wanting to make sliders (or bigger veggie burgers?), these would probably be good enough. The newest trend

I have the coolest friends.  Ever since we started budgeting my besties have been awesome about making dinners together (as opposed to expensive meals out).  Last Friday we made vegan tortilla soup with Ethel. Souper yummy

A play on the word soup?  Such an Elise move.  I blame this on my dad (thanks for the pun gene).   Here are a few of the reasons soup is awesome: 1. It’s filling. 2. It’s cheap. 3. It’s easy to make. 4. It can be healthy and still taste really really good. 5. It’s perfect for cold winter months. On the go breakfasts

His and hers differ minimally on the weekends, but on week days I make him portable savory fare.  He often eats in the car on the way to work.  His faves include mini breakfast quiches and grits.  And when I’m lazy, I’ll give him an Amy’s breakfast burrito.  Unfortunately, Amy’s burritos have gotten to be too expensive for our new budget.  Convenient, yes.  Pricey, yes yes.  So we said adios to the luxury of prepared frozen health food and hello to the home-made alternative.
