On the go breakfasts

His and hers differ minimally on the weekends, but on week days I make him portable savory fare.  He often eats in the car on the way to work.  His faves include mini breakfast quiches and grits.  And when I’m lazy, I’ll give him an Amy’s breakfast burrito.  Unfortunately, Amy’s burritos have gotten to be too expensive for our new budget.  Convenient, yes.  Pricey, yes yes.  So we said adios to the luxury of prepared frozen health food and hello to the home-made alternative. Creamy Quinoa with Kale

Quickie veggie dinner with mega protein – check! While the kale simmered in a water and olive oil bath, I prepared the sauce.  I took Sabra roasted red pepper hummus and added nutritional yeast to it, then thinned it out with lemon juice and water.  The more hummus you use, the better. Then I added the (already cooked) quinoa to the pan, cracked in a couple of eggs, scrambled the whole thing, and topped it in the lovely hummus sauce. 38 week check-in

I know what you’re probably thinking.  Didn’t I just post about week 37?  I was kinda behind with that one.  This post, however, is on time. What’s there to say really? I’m uncomfortable.  Real clothes sucks.  All I want to do is wear PJs all day long.  And do anything but sit.  Sitting is not at all comfortable.  Standing or lying down is fine.  Although it takes me half an hour to get from one position to the other.  Now I know what women feel like during the last few weeks when they just want… Read more >

Sometimes it’s hard to snack well

Not a typical statement (or opinion).  For me at least. But I’m being honest here. Between the hours of noon and 5 pm, I graze.  Meals have no room here anymore.  And I’m not super proud of what has been going in my mouth this last week.  It’s not terrible stuff.  But it still leaves me feeling blah.  I can do better. I miss well balanced full meals.  They’re easier to build – with all the macronutrients represented.  And they leave me sated for hours (until my next full meal).  Grazing is confusing.  I’m not… Read more >
