The return of Mexican

I finally did it.  I got over the “ick” of Mexican food that the stomach bug I caught in Cabo and morning sickness did to me. Kyle’s very happy about this since he’s been in taco withdrawal. Taco Night!! The prep for each ingredient was minimal. home-made baked taco shells (new method!) vegetarian refried beans lettuce Sabra guacamole Sabra salsa mexi-rice First up, the taco shells.  I can’t remember where I heard about this trick, but it stuck with me and I knew I had to give it a shot. Pregnancy Q&A #1

Warning: female talk ahead, proceed at your own risk. How/when did we find out? Well, the how is easy.  I peed on a stick.  I had been suspecting I was pregnant because my boobs were basically humongous all of a sudden and super sensitive and sore.  I first thought something was up on my Sabra trip.  We had been “trying” for a couple of months at that point so I abstained from alcohol while being wined and dined in Richmond.  When I got back home, I knew I wanted to take a pregnancy test. Iced tea & grazing

As you can see, I like my iced tea reallly almond milky. How I make it is recipe-free, but I brew pitchers of tea at a time (no sweetener) using 4 tea bags for my 2 liter pitcher.  I add boiling water to it, let it steep for a while then put it in the fridge to cool (but continue to steep) overnight.  In the morning I remove the teabags. Then, each day I pour some over 3-4 ice cubes, and then add maple syrup and unsweetened vanilla almond milk. Sometimes I can get the… Read more >
