Matadors and Mama terra

The third day in Sevilla came bright and early and this time we hit the ground running.  After a shot of tea, we were off.  Our first task was procuring train tickets for the next day’s commute to Cordoba.  [We had major problems the night before because apparently US credit cards don’t work on the rail system’s website] Wandering to the office was slightly embarrassing.  We were definitely those dorky tourists with the map out walking in circles.  We found it though!  Buying the tickets took two seconds in person (I highly recommend this to… Read more >

In the past I’ve used oats and beans as the main ingredients in various veggie burgers, but the recipe I’m about to share is definitely my best one to date, and it used neither of those aforementioned foods.  What you’ll need to recreate this heavenly patty… Wild rice and extra firm tofu. Lentils. Chia seeds. And carrots. Pink veggie patties (v, gf) 4 oz. extra firm tofu (approx. 1/4 a… Read more >

Cocoa loco

For some reason, I was in the snack food aisle of WFs last week (I usually stick to the perimeter of the store) and my browsing led to this purchase…   Vegan, gluten free, chocolate…no wonder they caught my eye. I’ve tried a few Enjoy Life products before – mostly granola and cereals (back when I was in nursing school and still hated nuts).  Being an allergy conscious company, I appreciated the no nut guarantee they offered.  The ingredients list is a bit long, but they are all recognizable to me.  The date paste and… Read more >
