All the football (is over)

Kyle was out of town, so we kept things low key for the Super Bowl. In anticipation of ALL THE CHIPS, I made us veggie packed lunches. The kids had roasted cauli and potatoes with chickpeas, all made from scratch that morning, and then I had leftover rice and lentil salad with kale massaged in a lemon vinaigrette. The daily unpictured

When you have pears about to turn into mush…you let them turn into mush in some steel cut oats. With cardamom and vanilla and coconut milk. It was a pretty dreamy breakfast. Lunch was Thai themed with the last bit of my Nugget sesame dressing, leftover roasted root veggies, kale and leaf lettuce, salty almonds, avo and cilantro. Annual return to Fremont

We went to Fremont on Friday afternoon, leaving straight from school, so I packed us all lunches and then relied on leftovers for dinner. Thanks to the fun traffic we got home JUST before the kids died of starvation. Dramaaaaa. Here’s a little dessert action. My favorite lentil salad

This is one of my very favorite salads and I know I often show photos of it on the blog, but somehow I’ve never shared the recipe. It’s from ATK’s The Complete Vegetarian cookbook, which is always my go-to when I’m feeling uninspired and craving plant based meals. They have a few different lentil dishes, but this variation with hazelnuts and chevre is my number one. Orange and green

Kicked off yet another Monday on the right foot…with a pile of produce. I can barely keep up but it’s not exactly something I’m complaining about. I juiced a crap ton of it right away that night, but the juice was extra extra green (if you know what I mean) so I went to pick some tangerines from the yard to sweeten it up a bit. Much bettah!
