Fill in the gaps

A few December dinners somehow slipped by without getting their spotlight, so here I am sharing the photos in case you needed some ideas, too. This was a way of reinventing leftovers – roast chicken served over rice with cauli and broccoli that I sautéed in tamari. Then I topped it in a sesame soy sauce with crushed peanuts on some. Trader Joe’s during the holidays

I finally sucked it up and took a trip to TJs while Kyle stayed with the kids. Butternut pomegranate salad

I’m sure I’ve posted many a kale salad like this before…I bet I could make it blindfolded. It’s basically a version of the grain salad I make every day but swapping in roasted butternut squash for the grain and pomegranate arils for the cranberries. Can you see the formula? The last week before break

We have had a WEEK! It has been such a major countdown to get to this break, I’ll tell you what. I don’t know who is more excited – me or the kids!? We now have two glorious weeks off of distance learning, and I plan to spend the entire time without ANY semblance of a schedule. Sleeping in til whenever, watching holiday movies, playing in nature, all that jazz. If I won the lottery I would spend all my $$$ on puzzles and just cuddle up with them on repeat. The weather outside is frightful

And yet, I’m still forcing us to go out and blow off some steam every afternoon. It’s not actually that bad yet, but 50 can feel pretty cold after an hour or two. The kids don’t seem to mind at all, but unless I’m playing soccer with them, I’m too cold to last longer than that.
