Savory leftover meals

Breakfast, lunch or dinner…it doesn’t really matter…some things are good at any time of the day.

Like grains and beans with a fried egg on top.

Or savory oats with tofu ricotta.

Having leftovers makes waking up easy delicious. 

It’s as easy as one, two, three…

Making the meal only takes as long as it takes to boil water. 

1 cup whole rolled oats + 1 1/2 cups water + pinch of salt

1 fried egg + 1 scoop tofu ricotta

If you’re wondering, yes, it tasted as awesome as it looks.

I liked it even better than this grain mix to be honest.  I chose oats over quinoa, can you even believe it!?

Who’s to say when sweet meals will return…

    I know you don’t do dairy, but I love oats with a laughing cow cheese wedge mixed in and then topped with hot sauce and an egg.

    I used to love savory oats with a fried egg, avocado, nutritional yeast, onion, and salt and pepper but it’s been so long since I’ve had a bowl!

    I love savory oats! One of my favorite ways is sauteed vegetables and some pinto beans, or a fried egg! But beans and oats are so good together… Haha weird, but so good.

    I really can’t wrap my head around savory oats! As good as they may be, the thought of eating oatmeal that isn’t sweet weirds me out.

    Love them with mushrooms, spinach, and peas with a fried egg….I definitely like the idea of tofu ricotta on them!

    I often have savory oats for lunch… I use half water and half v8 to cook them, for some reason they have to include corn, usually green onion, soy sauce and i put the hot oats ontop of a pile of fresh spinach/arugala so the greens wilt…oh, and avocado always helps.

    Anna’s recipe sounds delicious too! I’ve never tried savory oats but oats, eggs and avocado sound amazing!! I never really think of savory things for breakfast but when I hear about them they sound fantastic! My husband is a very picky eater and he is never around for breakfast…I think I just found my new way to venture into breakfast!!
