Last weekend, my Aunt, cousins, and G-ma threw me a wedding shower.

It was at my G-ma’s in Newport Beach and was definitely a hippie affair.

Exhibit B: My cousin prepared a vegan cake
Yep, that delicious looking thing was VEGAN. But I’m getting ahead of myself starting with dessert. Let me back up to the rest of the day’s menu…
Appetizers
Veggies, pita wedges, pita chips, and many flavors of hummus.
Lunch spread
Catering by the Corner Bakery.
Complete with sammies, chips, fruit salad, chicken slaw salad, and a quinoa/chickpea/spinach dish.
My first plate had a little bit of everything, plus an extra dollop heap of hummus, just for good measure (as if I need an excuse).
The baguette had avo, lettuce and tomato in it, so I added hummus to jazz it up. Otherwise, the rest of the food was super. I had seconds, thirds, and fourths of the fruit salad for dinner later that night – it was so fresh and summery.
After I opened my gifts (foodie items galore!), it was dessert time.
Dessert
My hostesses seriously outdid themselves!
In addition to the vegan carrot cake (which was made with a Tofutti cream cheese based frosting), there was a coconut cream cheese (non-vegan) cake, chocolate brownies, and cookies.
Everything but the cookies was made by my fam.

The cake was really really good (I love the combo of carrot cake with raisins), but the frosting was kinda meh. I guess buttercream is pretty hard to imitate, but my cousin did an amazing job and I couldn’t have been more impressed.
The whole day was perfect. I felt like a princess with my family and friends all doting on me. It was truly one of the best days of my life.
The three mimosas before noon didn’t hurt either. 😉
Suddenly it’s all becoming real – I’m getting married this summer!

Maybe you won’t think this is as funny as I did, but when I first looked at this post, I was distracted at the Bux and just sort of skimmed the pictures. Anyway, I did a double-take at the first appetizer picture of all the veggies because I TOTALLY thought it was your plate and I was like “Wow! That’s impressive even for her!!!!”
Anyway….it made me laugh a lot.

that vegan cake looks amazing! i just loveeeeeee vegan baked goods.. i swear even though i’m not vegan they are better than (most) non-vegan sweets

Oh my gosh, that’s the best food spread eve! I had like 5 wedding showers, and NONE of them even came close to having delicious looking food like that. Can your cousin come bake me a “I’ve been married for 3 years cake”?
