Soy happy

Why oh why couldn’t I just sleep in?

Sadly, I woke up before 8 am…making my total shut-eye time less than 7 hours.  Far more than I used to get (back in my days of employment), but far fewer than I’ve been getting lately.  My body was ready to go though, so whatever.

After my first cup of coffee my mom had to go to the hospital.  It was kinda last minute and she wasn’t able to drive herself, so I made another cup of java to-go and we were off.  She’s ok, don’t worry, but I don’t like to make a habit of spending my mornings in the Head & Neck Surgery department.  I think everything is good in the ‘hood now though.  Ugh.

When I got home it was already past noon, so I dug into the fruit – sprinkled in cinnamon of course.  But that was just to warm up my taste buds.

For lunch, I tried this new product: Trader Joe’s Organic Greek style yogurt.  It had little flecks in it, which I am assuming were vanilla beans (it was vanilla flavored after all…).  It was really thick!  Better yet, it was tasty and my stomach tolerated with no problem whatsoever.  Looks like we have a winner!

I was doing errands all over the place in the afternoon.  Wedding stuff has taken over my life, but found a moment to pause and inhale the above Mediterranean creamy hummus.  This was very similar to Sabra in it’s consistency.  So rich.

The above photo is worth noting for two reasons: (1) I am drinking water [it’s been a work in progress, but I’m starting to drink multiple glasses a day – just like you’re *supposed* to]; and (2) I am using a 101 Dalmatians straw that is nearly two decades old [how ridiculous that my parents have saved things like this for so long].

Do you have any old sentimental (or not) things in the house you grew up in? We have several plates, cups, and mugs from over the years that have survived far longer than they were ever intended to.  Some we made ourselves, some were gifts, and most of them are fairly ghetto looking now…but apparently we just can’t seem to part with them.

I don’t usually like soy ice cream, I far prefer a green monster, but my magic bullet is in storage in downtown Los Angeles, so on a hot day, this is what I turned to.  It was pretty good, but reminded me more of frozen yogurt because it wasn’t rich or thick like true ice cream.  The only non-dairy alternatives I have found to hold a candle to true ice cream, are the coconut based options…not that I even remember what real ice cream tastes like. 

My dinner was a bit of an assembly line operation.

It looks like my carb-a-licious New York vacay caught up to me, since ALL I seem to crave upon returning to CA is soy soy soy.  Maybe my body is trying to tell me something?  Where’s the protein at, yo!?!

First I heated up some frozen Roasted Corn (grill marks by Trader Joe’s), then I added in the edamame and the chopped up savory organic baked tofu (both blocks).

Topped off with a few chopped carrots some canned mandarin oranges and a dash of teriyaki sauce.

Winner winner tofu dinner.

If you’re looking for quick and easy, this is the dish.  It took 10 minutes to “prep” and kept me satisfied for the rest of the night.  No dessert necessary.

    Re. sentimental things from days of young,
    When I was younger my favourite farm yard animals were pigs. So, I was often bought pig soft toys. But when I got married, the husband wasn’t supportive of my having pig soft toys in our new love nest (he’s chilled out a bit now). Anyway, at my parents place there are two soft toy pigs left- one massive pig, which I shall “sneak” back home some day (not sure how that can happen!), and one small pig called Patrick that I used to cuddle (when I was MUCH younger….).

    Nooooo dessert necessary!? What does that even mean??
    haha I’m not familiar…..Dude I’m SUCH an early riser too- I got up at 6 this morning!!! But i did crash at like, 8 or 9 pm after Saturday funday so it’s fine 😀 Have a great 4th lady, hope your mom is ok!!

    Loving the overload of TJ products! I’ll have to try the baked tofu, if it’s anything like the baked tofu the vegan restaurant where I work offers, it will be killer. Have you tried cashew based ice cream? That is super creamy, too.

    I’m sentimental to certain coffee mugs at my parents. So much that I more often than not use them for food. Anything that will fit is fair game.

    The fact that you can buy frozen roasted corn made me LOL. So freaking funny! (But convenient?!) I’ll take it I guess. Yeah I prefer protein ice cream/green monsters to alternative ice creams. Or I’ll just take the real thing. The real, dairy filled, egg+sugar thing. 🙂
