Super low carb granola

My friend just got diagnosed with diabetes so I’ve been working to help out with managing the diet side of things (not that I’m an expert or anything, but I do know more than most people about nutrition in general).

For Christmas I made them granola – without any grains and hardly any carbs at all.

Low carb granola [vegan, gluten free, dairy free]

Ingredients:

  • 1/2 cup almonds, coarsely chopped
  • 1/4 cup almonds, slivered
  • 1/4 cup almond meal
  • 1 cup cashews, coarsely chopped
  • 1/2 cup pepitas
  • 1/2 cup shredded unsweetened coconut
  • 1/2 cup hemp seeds
  • 1/2 cup sunflower seeds
  • 1/2 tsp salt
  • ~1 tsp stevia powder (or ~5 packets)*
  • 1/2 tsp cinnamon
  • 1 cup canola/melted coconut oil

Directions:

Combine everything in a large mixing bowl and stir until granola is well coated.

Bake until golden brown (about 30-35 minutes) at 275 degrees F.  You can toss once half way through if you want to be sure everything gets uniformly toasted.

It will harden further as it cools.

Store in an airtight container.

*Stevia preferences are very different due to a variety of factors, namely the brand you use and what your taste buds are accustomed to.  Start with a small amount and taste the granola before adding more (sometimes it can have a bitter aftertaste).  I use NuNaturals because it’s the best stuff available.  If you’re not interested in making this SUPER low carb, you could sub 1/4 cup maple syrup + 3/4 cup oil for the 1 cup oil listed and nix the stevia.

This batch makes enough for several servings (that’s an 8 cup mason jar pictured).
