What I Ate

I made a big batch of coconut milk chia pudding that will last a few days for breakfast when combined with nut butter and fresh fruit.

It’s almost time to pick our nectarines!

They aren’t quite ready but the birds are starting to want to get at them.  Lay off my fruit!!

Next time you see this bowl it will have stone fruit in it.  Or berries.  Or both. 🙂

My lunch salad had kale, cabbage, carrots, mandarin oranges, cashews and chicken with a sesame tamari miso dressing. I had made a huge one to feed me for two days but I accidentally ate it all.  Oops.  I was ravenous all day and kinda knew it was just one of those days and I better listen to my body.

For dinner I made mummy dogs from the Halloween chapter of Danielle Walker’s Celebrations cookbook.

I made the dough earlier in the day and let it chill in the fridge until it was go time.  Then I rolled it out between parchment paper and cut it into six squares.

I made 12 (with two packs of applegate organic hot dogs), six with the grain free dough above and then another six with biscuit dough from TJs (which had wheat).  Anyone know a good store bought GF biscuit dough?  In the meantime, I’m pumped to have this recipe.  It’s actually easy to make so I’m happy to keep making it.  [This is the second time I’ve made it]

Oh guess what else I did!

I made corn in the instant pot!

It was FAST you guys!!  Once it reached pressure it was only a few minutes!!!!!  Game changer!  The only problem is that my IP doesn’t fit more than three ears of corn and that’s including one broken in half.  For now that works because the kids split an ear, but I feel like I’m going to need an upgrade to the big boy IP soon.  Oh my gosh did I just say that!?!?  Who am I!?  I can’t be the person with multiple instant pots.  I can’t.

I did this, too.  On the plate is the last bit of a salted almond TCHO bar, which wasn’t quite enough, hence the other toffee and sea salt TCHO on deck.  😀

    Chia pudding and i had to take a little time apart for a while…. apparently with my high fiber diet and lots of probiotics adding chia to the mix was a bit too much. I’ll spare you the details.
    I do love it! Especially with coconut milk. I probably was just having too much at a time so maybe i should revisit chia pudding but mixed in with some yogurt.
    Haha, I totally do that with my dinner salads- “oh, totally enough for lunch tomorrow too!” And then…umm.. no, three bites leftover aren’t really lunch.
    I read in a nutrition article once that random days of extra hunger are likely from an accumulation of past days with a caloric deficit which I thought was interesting because i always thought i just didn’t have enough breakfast or my exercise that day was intense. Super cute hot dog roll ups!
