What I Ate

Oops!  This post got buried in drafts somehow.  I don’t even know when it is from!  Imagine that…I wrote a post and then forgot about it…after months (years?) of barely getting a post up over the span of a week, I’m now so prolific that I’m losing track of them. 😉

So good news guys!  I wrote the recipe down (and it turned out!) for this banana thang, so I’ll post it in the next few days.  I swear I have a curse where I make things better when I don’t measure…and then I feel bad for not sharing the recipe…so I measure things the next time I make it…and then it totally flops!  It happens all. the. time.  Kyle actually gets nervous when I tell him I’m measuring things. Ha. And by the same token, every time he loves dinner he says “this is awesome, I’m sure you didn’t write it down though, huh?”

Slim pickins’ for the kids (I haven’t been on my game with prepping for their lunches!) so I made an easy white bean/avocado/nooch bowl.  Cutie tangerines and cucumber slices on the side.

Once they were in bed I got my salad face on while doing research for my political activist group. I watch plenty of Housewives on my computer so don’t think I’m all cerebral and on top of it, but I do feel very strongly that I have to do my part to get my opinion heard. We thought we were the first indivisible group in Davis, but there’s another Yolo group too, so that just goes to show you there are huddles happening ALL OVER.

After naps we went to the train station to watch trains come in, including Kyle’s train.  I didn’t tell them he was on the 500 train so they were super excited when they saw him get off and started shrieking with excitement.  It was so cute, I think it made every other passengers’ day.

I kinda messed up dinner, but it was still good enough.  I meant to make an Asian stir fry style dish with spaghetti squash noodles but they got overcooked since I baked the squash in the oven before stir frying it in the wok.  I should have undercooked it so it was still slightly al dente when I added it to the wok, that way it would still retain it’s stringy shape.  Oops!  It got a little mushy as a result, but still tasted good.

I haven’t used my wok in forever.  First I sautéed onions, celery, and shiitake mushrooms in sesame oil, then I added a bunch of green cabbage.  Once that had cooked down to nothing, I added tamari, sriracha, ginger, and white pepper.

Then the spaghetti squash noodles and sesame seeds.

Not pretty but this is why I’m not a professional blogger.

Guess what I had for dessert?  Duh.  Chocolate.

    That sounds soooo adorable how excited and surprised they were to find their dad on a train!
    I never came around to spaghetti squash :/ maybe I’m not good at cooking it, but it just wasn’t for me the 2-3 times I tried.

    I totally get it. I feel that way about many mock noodles…this one is good to me when served in the squash like a bowl….I kinda realized that after this mushy mess…
